I was jonesin' for a shrimp burrito but alas, I got busy and never made it to the Try-N-Save for shrimps.
 
Every good meal should start off by making some quac.
 
Molcajete'd garlic, jalapeno, cilantro, pineapple, kosher salt, in olive oil.
 
Tossed in 2 avo's and drove downtown with it.
 

 
Warmed a flour tortilla and added black beans, shredded cabbage, the guac, smoked salmon, cilantro, and queso fresco.
 

 
This' what I'm talkin' 'bout!
 
Rolled a fatty and mao'd it!

Fettuccine tossed in the Alfredo with Scallops.  Garlic toast and a couple wedges of lemon with a nice cold Bock to wash it down.

I ain' got nothin' on HnB, but I was alone for dinner tonight (rare quiet night where the wife and kids are all out), so, of course, I did what I'm never allowed to do. Pan searing with superhots :D But extremely simple dinner because I was a bachelor for the evening.
 
It was a little hard to breathe in the kitchen between the smoke from the olive oil and the stupid hot scorpion salt I used, but the mahi mahi was compliant and cooked up well on the CI skillet.

Now that is a hot skillet. Turned it down a bit to cook the other side and the middle. ;)

Love the flavor and crunch and the heat from the scorp salt, all the coughing, not so much.

I completely understand the chile hitting the oil... It'll wake ya up for sure!

Mahi is lookin right and I damn sure could go for a tater about now.

Hopefully no gulf coast seafood vendor gets on THP and sees all the love for mahi and start a trend of jacking the price.
