I'd think there's something wrong with that guy.
I think i've seen a couple of time that and the chef or waitress weren't pleased at all.
My dad would use heavy cheese even in that.

Btw mozz and anchovies are great together for pasta.

Yep, my Papa was right off the boat and use to make all kinds of fish dishes, but the one that came to mind was Calamari in pasta with a red sauce and parmesan cheese on top (Boy I hated shredding the parmesan), but he also made a fettuccini with muscles in a white alfredo sauce.
 
It was what the men gathered for on Friday nights for an early dinner. I remember as a kid smelling that squid thinking am I going to have to eat that when I grow up too. Sure enough as I got older I became a big fan of what both my Italian grandparents could cook.
 
I’m only sorry I did not pay closer attention, as I lost so many good recipes with their passing.
 
But I still have the original Italiano Recipe for the “Pepper Cookie”. They used black pepper, but wait till I’m done with it this season!  :D
 
I'd eat that dang salad!
 
And any other seafood that Chris whoops up.

keralan fish curry with steelhead trout over basmati rice.  Not the prettiest dish but so tasty.
 
   I added extra hot sauce  because  the amount of   chiles in it were at the top end of my wife's heat range and the wedge of lime since my kadampuli  (Fish Tamarind totally different than regular tamarind) seems to have gone stale and didn't add as much sourness as usual.

I love Mexican style chorizo but I don't like all that cholesterol in it. Sure its all sexy grease and thats why it tastes good
 
but I have to choose my battles carefully as I get older.
 
Reckon'd I'd conduct some scientific 'speriments in The Blues Kitchen and try and make a fish chorizo.
 
Why? 
 
Because its fantastic.
 
Behold.
 
A little less than a pound of steelhead with hot bo-hunk paprika, cumin, kosher salt, granulated garlic, a couple of TB's of 
apple cider vinegar and a squeezin' of lime.
 

 
Looks right and smells wonderful.
 

 
Added an egg and some oats to bind it up and patty'd it up and Black Bettyficated.
 

 
Would make a killer pheesh burger but I opted for tacos. Duh!
 
Jalapeno' crema brings the magic.
 

 
Hear me now and 'bleed me later...you want this!
 
The chorizo flavor is poppin' and lockin' like ReRun y'all.
 

 
I have gotta' try this on shrimp!

I didn't list it but a healthy dose of Mexican oregano was in there too.
 
Next time I reckon I'll let the fish and spices marinade over night.
 
Don't know why I never made chorizo with fish before but this ones a keeper fo' sho'!
