Fil, when i go to tokyo....you must take me on a ramen tour. That looks amazing. I see naruto in the broth, is that pork? what's the other stuff? katsuoboshi?

That looks like a tantan bowl! Mmmm maybe I shouldn't have brought my lunch today...
 
It's been awhile! I've been on holiday this entire week, prepping to start my new gig next week.
So today I decided to hit up a little shop in my area called Komugi (literally translates as wheat). This shop is a gem for sure. It's only open for a few hours a day and always has a line. You only have two choices Shoyu (soy base) or Shio (salt base) and once in awhile they have their Special Tsukemen (dipping). Once they run out of noodles, they close up for the day.
 
Today was my first time in the past two years since they opened, simply b/c timing + line never worked out. It was DELISH. This is their Shio Ramen topped with Ajidama (egg) and chashu pork. One thing I did not know is that you get a choice of chashu as a topping by default with the Shio, so it wasn't necessary to order it. Ah well, I got to try two different kinds of chashu today so it's all good!

I was just watching hunterxhunter anime and komugi was a blind world gungi champion. are most japanese names named after things like wheat? Anyways, I love all these ramen posts fil, keep it up. My list keeps expanding for when I go to tokyo. not sure if 3 weeks will be enough!

Haha, yeah I think in Japanese it is just easy to pick an existing word and use it as a name. In general people's names are taken from characters that have their own meaning anyway.
 
I'll be honest, you might get sick of ramen if thats all you eat for three weeks, not to mention the massive weight gain lol. I think one...maaaaybe two bowls a day (big maybe!). There is so much more to enjoy here ;-)
 
When you do make it over, let me know and if I can I will make it out and have bowl and a beer with you haha. Yeah that doesn't sound like we're talking about ramen at all....LOL

lol yea, a bowl and a beer sounds like a good way to get thrown in to japanese prison, and they aint got no prisoners over there. But yea....i could never get sick of ramen, though hopefully all the walking will help with the massive weight gain. I would probably make it my goal to eat a bowl a day. i'll let you know when i make it!
 
So I'm in Asheville, and everything here is farm to table. So I figured hell, somebody has to make some good ramen. As it turns out, lots of people make "noodle soups" but there were only 3-4 places which made a legitimate japanese style ramen, none specializing in just ramen. The first is Gan Shan Station, about 1.5 yrs old. It's a pork broth, alkaline noodles, crispy pork belly (a little too salty, had to soak in broth to get less salty and wasn't as crispy) and a 64 degree egg. It was pretty decent, but wasn't flabbergasting. The second picture is from Ben's Tuneup, a white man who brews his own sake (cinnamon cookie sake was like heaven in a cup, most interesting sake I've ever had). The soup featured pork broth (better than gan shan), egg noodles I think, a 63 degree egg, smoked pulled pork which I preferred over Gan Shan's pork belly. I ate both yesterday to get the best comparison. Overall, I'd go back to Ben's for sure.

I have an office that I manage in Tokyo.  We do a different ramen shop every day.  Its amazing.  Ill be out there in two weeks and will add more to this thread hehe.
