Okay... How's this one compare as far as heat/taste?

Sweet heat noodles and rice cakes just are not my "cup of ramen". Ive never been fond of tteokbokki and the taste is similar but much hotter. My brother gets one of the "hot ones" occasionally. I dont actively look for them. Ive tried many but i haven't tried any i like much. Nongshim has a Spicy Seafood Neoguri and the Mykuali white curry are my favorite hot ones. I have not tried the Samyang spicy curry yet.

If you want to try a fairly spicy ramen and if you like curry, try the Mykuali Penang White Curry ramen. They are back on Amazon for around $15/8pack which is a pretty good price.

Ramenrater has a dan dan ramen listed on his website. Real dan dan noodles are excellent. You can get close to that flavor with Pixian chili bean paste and some sesame seed paste. The one in the video is hard to tell. Looks like a heavy pork broth with hints of Pixian and maybe heavy sesame seed paste.

This made his 2018 top ten. I will be keeping an eye out for it

I made Dan Dan soup or maybe it's Tantanmen, IDK. It was good for spicy peanut butter noodles.

I watched a few vids, read a few recipes and made the call. Another $25 of Asian products and I ate a bowl of soup. I'll have to list the process tomorrow cuz I'm tired, full and happy.

I could've made the soup base a little thinner but it was awesome. I ate most of the noodles then added more with a little water to thin it out, into the microwave and BAM=gone.

I really like that thick sauce, it sticks to the noodles!

More noodles please

Here's about what I made

Tan Tan Men is the Japanese name for Dan Dan noodles (mian). Notice in the Japanfood link you posted the recipes calls for doubanjiang aka spicy chili bean sauce or preferably a Pixian variety if you can find it. Try Chengdu Dandan brand or China Time Honored brand. The stuff is really salty so you may need to make recipe adjustments. You can get it in smaller bags too instead of buying a big jar.

You may also like Hot Oil Noodles (You Po Mian) with a good shot of LaoGanMa. :D Normally it uses a flat noodle but a simple ramen style would be cool too.

I also watched Trevor James on a Dan Dan tour, it's a good one to check out. I could tear up a few of the bowls he ate.

I forgot the pickled mustard greens and bean paste. I even forgot to add the cilantro to the bowl and it was on the counter top when I ate. The store had bok choy but it looked like the tractor ran over it in the field.

I tried some fresh Havista brand Lanzhou noodles and they were good. I kept bugging the guy in the Asian store trying to find things, good thing I had a list. He was goggling what I had written down to know what I wanted.

Just plain old cabbage. Stirfry it with the pork and picked mustard near the end. You can use any kind of pickled mustard but the Sichuan kind will add more flavor to the pork. Little packs like this are about a buck and you probably dont want to use all of it. Just use it as a seasoning.

Thanks, I'll look for it or have the guy find it for me.

Hey, check this out. I didn't know who Trevor James was till I found that last vid. I'm impressed with Mark Weins heat tolerance when Trevor's eyes are watering. Mark is like yeah flavorful.

Watch for a few minutes, it's set to the scene.

I just made a killer bowl on ramen almost like Dan Dan. What do you call Dan Dan noodles without the curry? That's what I made and it was awesome, it's not that I don't like curry but this was just different.

For the sauce I added to a bowl
1 tsp miso paste
1 tsp creamy peanut butter
1 tsp sesame paste
1 tbs pepper paste
1 tbsp sesame oil
2 tbs soy sauce
1 tbs rice wine vinegar

I mixed all that up so it's creamy then added
1 clove minced garlic
about 1 tbs grated ginger
1 sliced green onion

I mixed it up with a ladle of hot noodle water, I added that to the pot with the fried ground pork to cook a few minutes before adding 1 cup of hot water and 1/2 tsp of chicken powder/Knorr's boullion and stirred.

Served over the noodles topped with slices of smoked pork butt, sliced onions, green onions, cilantro, sesame seeds, 1 tsp fish sauce & soy sauce and sriracha.

Tried this one out today with a fellow chilehead:

DSCN0007.JPG

The package came with a liquid sauce packet and a dry packet that looked like seaweed and sesame seeds. Boiled for 5 minutes according to the package instructions. The noodles were pretty thick, The sauce was a deep red. I liked the noodles and found the heat level a bit below my go to noodles which are the http://www.nongshimusa.com/homev2/our-products/shin-brand/shin-ramyun/

I had to add some heat to this one, which consisted of some Franks, some datil powder, and old mans spices. It was pretty good overall. It was a nice lunch, with no after effects like having to run to the bathroom and reading war and peace. Cheers!

Looked for the Mom's brand dandan noodles at 2 markets with no luck. They were out of the Prima Taste too which was the main reason i went.

I did find these and brought home a 4 pack. I got some good Pixian chili broad bean paste without oil (Juancheng China Time Honored) brand $2/227gram pack. Its the real stuff. Got some nice ground pork too and fresh Sichuan peppers from the garden. :D

While i was there i saw the Samyang hot curry chicken flavor and grabbed them too.
https://www.theramenrater.com/2017/03/14/2369-samyang-buldak-bokkeummyun-curry/

Both of these are more of a dry style. You boil the noodles and then add the seasoning packs to the drained noodles.

I tried the Samyang hot curry chicken flavor today. Added some white onion and rotisserie chicken thigh/leg meat. Its not that spicy but hot enough to scratch the itch. Some sweetness that is typical of the Vermont style curries and the sauce used for spicy Korean rice cakes. 8grams of sugar if that gives you an idea of the sweetness.
