New Hot Sauce - New Label

I finally made my full-on ultimate superhot hot sauce.  This sauce contains only Trinidad moruga scorpions, garlic, salt and vinegar.  It is blazing.  Basically, it's like a liquid moruga with a vinegar kick.  I'm on a mission to create the hottest non-extract sauce I can, and this one has got...

    Brain Strain or Trinidad

If you can tell the difference in heat from those peppers when mixed into a recipe - you have more skills than me. They both blaze.

    condiment Salsa lizano?????

Anyone ever had anything like this? I'm thinking of making this in a super hot version. I'm thinking some douglahs or 7 pot burgandys (I have both) would work great in this sauce. Thoughts? Also the two week thing in the fridge bothers me. I'm gonna see if I can get this stuff shelf stable...

heat The heat, the whole heat and nothing but the heat ...

You notice that it's all done outside.  When I made this stuff inside (once and only once), the steam made it hard to breath in the house.  Even my dogs were coughing and begging to be let out.  The wife said, Hell no - never again are you making that crap in this house.  I get some serious...

heat The heat, the whole heat and nothing but the heat ...

I put the jars into boiling water for 10 minutes. I do not completely submerge them but put th in water just up to the bottom of the lid. This hears up the sauce and kills any nasties that may be lurking. When they are done, I take them out of the water and place them upside down to let the...

Made another batch of the old stand by hot sauce today.  This is pure Satan's ass crack on earth hell sauce.  No tomatoes, no carrots, no onions, no water - Peppers, Salt, Garlic, Vinegar - Done!!!   I have called this stuff Moruga Mama Lava, Ludicrous Lava, and lots of other things over the...

    condiment Authentic South Texas Salsa

East TX or Dallas Yankees - ranch dressing. Texans and ranch dressing claims can only be made by a transplant. South Texas or West Texas - Knorr. We don't put Knorr on things - we put it in things. If you walk into a south texas grocery store and hit the Mexican aisle - you will see big jars...

    condiment Authentic South Texas Salsa

I use 20 large homegrown tomatoes per batch. If I'm using smaller store bought - or if I use the Roma's, I use two if those for one large home grown.

New to the board - first sauce of the year - Moruga Mama Lava

For those peppers - I used about a teaspoon of salt and about two tea spoons of garlic - as for vinegar - cover the peppers and boil them. Add the peppers to a food processor and blend them. Add as much vinegar as you want until it is as thin as you like it.

    condiment Authentic South Texas Salsa

@Roguejim   Yes, the flavor of the cilantro is there.  It carries through nicely.  My cooking time depends on how wateryand/or ripe my tomatoes were when I started.  I will say, the longer I cook it, the more the flavors concentrate as it cooks down and the better it usually tastes.  With store...

New to the board - first sauce of the year - Moruga Mama Lava

Made another batch this morning.  Here it is.   The catch of the day ...     I had some vinegar left over from the last batch so I saved it.  This was the excess vinegar that was used to boil the peppers.  It was hot enough to hurt people on its own.  I reused it in this batch thinking it can...

condiment Anyone with an AUTHENTIC mexican salsa recepie?

I live in El Campo, Texas.  My mother's maiden name is Banuelos.  We know our salsa.   The rest of my family lives in Del Rio, Texas where they can throw a rock and hit Mexico.  The truly Mexican salsas they have over there use oil in them and are not similar to what we think of as salsa.   Here...

    condiment Authentic South Texas Salsa

That is the secret ingredient.  You will find Knorr on the mexican food aisle in the grocery stores around here.    We put a little of that stuff in everything (beans, rice, salsa, etc.)   Living in El Campo, Texas and having my mother's maiden name be Banuelos, you have to trust me on this...
