I was thinking about some shoestring onions, originally, because a number of folks said they dug them recently and I've never made them ...

I have a favorite batter, so hell yeah ...

But then, we had Indian Friday night and it occurred to me that the onion bhaji could be great on a burger ...

So I sliced a shallot and tossed it in beignet mix ...

And then lightly battered a round of them on my solid spattie and slide them into the oil ...

So, I'm happy with the beignet bhaji, but I had some batter and I thought I'd give a bun a try ...

It's almost impossible to work with the dough for shaping with it at the hydration needed to try to steam something tall enough to be a reliable meat-handle for a double cheeseburger with toppings ...

I've been playing with this for a few days on and off, and even emailed the dude from the Budweiser contest from Esquire about it ...
