Mexican Food

Ok so here is a new thread dedicated towards traditional/authentic Mexican Food. Now i suppose this can be a fairly broad range, but hopefully it can also be for discussion and ideas for some more authentic flavoured dishes.

So this first dish that i have put together, I only have recently discovered. Went to a "Authentic Mexican" restaurant in the city, and this dish was on the menu. Sounded very interesting, a strange combination of flavours. but when tasted was brilliant.

POLLO EN MOLE POBLANO

After some discussion through the THP, a member was kind enough to send me some ingredients and guidance from half way across the world so that i could re-create this dish. CHEERS!!!!!

I now had all the ingredients and the vital Tequila, to quench my thirst as i was about to cook up a storm in the kitchen. Music blaring, stovetop smoking, oven heating, Ready to Rock

First of all, a shot of tequila!!

Whole chicken was cut up into sections, thrown in a big pot, covered with chicken broth, onion cutup and added, and a whole heap of garlic cloves thrown in for good measure. Let that simmer away

SDC11899.JPG

Next thing was to get the chilis and some tortillas crispy. In the oven they go.

Another shot of tequila

Toast some seeds and nuts in the pan

SDC11901.JPG

Once the chicken was done, strain, removed all bones and skin. Discard the onion and garlic, but kept the broth.

SDC11903.JPG

Nice and crisp

Another, Why not?

SDC11904.JPG

Removed the stems and seeds from the chilis

SDC11905.JPG

Placed all the chilis, tortillas and some other ingredients in the blender. Added some broth, then pureed to a nice consistency

SDC11906.JPG

Look at the color

SDC11908.JPG

Started to melt the butter and chocolate

SDC11907.JPG

Tequila!!! Things were really heating up

SDC11910.JPG

Yummm

SDC11912.JPG

While this was all going ahead, i thought i would try to make some Queso, hmmmm not sure if it really did work, but it did taste very good. Extra sharp cheddar and scovie powder

SDC11913.JPG

Now the puree sauce is combined with the choc butter mix and cooked

SDC11914.JPG

Chicken got thrown in the mix, nearly getting ready to plate up. By this stage the tequila may have started to have a little bit of an effect on me. By i was smiling from ear to ear

SDC11916.JPG

Some sort of Queso, little bit more Mac n Cheese style, and some Mole

SDC11918.JPG

Plating up, couple of tortillas, some queso and a fresh little salsa. All of this tasted great. Maybe a little more tequila as well

This mole tasted great, hopefully i have done the dish some justice either way. Was a really fun day, trying something new and look forward to some more authentic dishes that we can all try.
Definitely need to work on my queso skills.

Now that this was all done, had a full belly, it was time to have a drink.........

Damn Booma! The Queso needs Saving (SAVE QUESO!) but you nailed that mole! I recognize Scovie's 20 year old recipe... I have the makings too (Thanks Scov)... just need to do it!

WOW!

Had to have a go at this as well. Poked around the interwebz and found a shit ton of recipes. Went with a simple one.

Turkey legs simmered for 2 hours, removed meat and reserved broth.
Mole was 3 chipotle, 4 dried birds eye (cbf going out to buy poblano and ancho) 1/2 onion, 1 tbs sesame seeds, 1/2 tbs almonds, 2 tbs peanuts, 1 tsp black pepper, garlic salt, 4 cloves garlic, 75g dark choc, small stick cassia bark, 1 cup turkey broth (prob another ingredient or two in there somewhere that I've forgotten). Dry roasted dry ingredients, added broth and rest of ingredients, cooked over low heat for 1/2 hour and blended to death for 10 minutes.

Hot going in and it's gonna be the same on the way out :)

Grilled corn with sea salt, butter and garlic, simple pico de gallo (cherry tomatoes, white onion, coriander, chilli, lime juice) and mole with turkey.

Looks great DTS. what is cassia bark? Is it like a cinnamon stick?
I love the color you got goin on there. I like the ease of your recipe, and the turkey is nice with the dark meat from the legs.
I have actually made Mole with Tiger Prawns before. Not my favorite, but everyone else loved it.
Mole is like burgers, every Mole is different, and they are all awesome.
Well, not all, Some of the crappy "Mexican" restaurants will have a Mole made with basically Pumpkin Seeds and peanut butter and zero heat. It's ghastly stuff.

I like it DTS!

Yup, cassia is like cinnamon. I read some recipes are up to 30 ingredients! How can you taste anything in there...? I like simple recipes. Gonna cook this up a few times following authentic recipes then go for my own balancing my preferences for sweet, savoury, salty, spicy etc.

I would greatly appreciate your recipe as well :D

On a side note, I was browsing http://www.fireworksfoods.com.au/ and found this...anyone seen this before?

No problem. PM me your email addy, and I'll send it PDF.
Like you, I have developed my recipe to balance the sweet vs. heat. I still my make it hotter than usual from time to time, but you know what I mean. The original recipe I started with (20+ years ago) called for 1oz. chocolate. Since then I have tripled it.
My experience has been the more ingredients, the better the Mole. TO A POINT. lol
Yeah I have read some of those recipes also and they are treacherous. you only need so many nuts and seeds and stuff.
All of the ingredients should blend so you shouldn't be able to taste any single ingredient.
I'm not telling you anything you don't know....

I had a Cassia tree in my yard as a child. We knew it was an alternative to cinnamon and munched on the leaves. Probably half+ of the "cinnamon" sticks you buy at a retailer are actually Cassia bark.

I have had that. Truly dreadful stuff. Tastes awful.

Anyone see read this guy's book? He delves into the idea of authenticity, makes interesting points and gives a lot of history.
