Nachos!

Tried my hand at doing Mexican for the first time ever and ended up with this.... 
 
The foundation and some homemade guacamole. I got NFI what guacamole is supposed to taste like, never done it before....it ended up tasting flat, like it was missing something.I noticed some recipes include Tabasco. So I added a good dash of Tabasco and a fair whack of lime juice and it perked it up nicely. 

 
Beef, Kidney Beans, chopped onion, crushed tomatoes and a decent helping of Cumin, Coriander, Cayenne pepper and Chilli flakes simmering away

As we all know, Mexican food kicks ass, and thus this can be the official nacho thread. Show us your wizardry!

It was a rib and potato hash so wanted to go light on the chips but there's a handful in there somewhere. Damn tasty

Quick and dirty, Smoked Cheddar and Gruyere. Salsa and Almonds, melted the cheese prior and poured over.

Those look great btw nice queso.
 
As for the black olive thing, I too dig, the reason is, they go so well with sour cream, so the nachos must have sc if they have olives.

Edit: I can actually see it. Nachos with Almonds. I would eat it (of course) but would never so it on my own.

Homemade chips, rocoto's,serrano's,garlic,onions,avocado,negros,sweet corn,smoked dried rocoto powder,bison,splash of adobo sauce,squeeze of lime,dollop of sour cream. sure i'm forgetting something but they were good.

Made this for a couple nights.
Baked Beans with cheese plate and Tuna with Egg and eggplant spice dip mix topped with Smoked cheddar and Dill.
