Nachos!

Tried my hand at doing Mexican for the first time ever and ended up with this.... 
 
The foundation and some homemade guacamole. I got NFI what guacamole is supposed to taste like, never done it before....it ended up tasting flat, like it was missing something.I noticed some recipes include Tabasco. So I added a good dash of Tabasco and a fair whack of lime juice and it perked it up nicely.

Beef, Kidney Beans, chopped onion, crushed tomatoes and a decent helping of Cumin, Coriander, Cayenne pepper and Chilli flakes simmering away

Homemade chips, rocoto's,serrano's,garlic,onions,avocado,negros,sweet corn,smoked dried rocoto powder,bison,splash of adobo sauce,squeeze of lime,dollop of sour cream. sure i'm forgetting something but they were good.

If I was there right now..... I'd quit my job and resurface my shitter with the same ablative coating they put on the X-15
 
...when I discovered Tostitos cheese sauce and was able to make movie theater/ball game nachos at home, my wife almost killed me. 
 
More jerk brisket nachos ...

Same black olives, corn relish, rotel, pex's taco fuego, and mrs renfro's ghost pepper nacho cheese, but now with tctenten's mystery wine hs, JHP's cappucino powder, and Dru's taco seasoning to tie the room together ...

Each of your posts (with brie) slays me ... gets me wanting baked brie w/ raspberry preserves instantly upon seeing it each time ...
