    Youngest Professional Chili Grower Ever?

He labeled these as scotch bonnets. I looked them up and saw that you might be right and that they are bishops crowns. I didn't have personal contact with that boy so I don't know where he got the seeds from.

    Youngest Professional Chili Grower Ever?

I wish this was my harvest but it ain't! Well, a long picturesque prologue for a little story. One of my patients is fond of hot stuff too and he told me that there is a farm in our area where they grow various kinds of fruit and produce in the greenhouse all year long. They are local heroes...

    Dillo's X-Mas Hot Sauce

It only gives a nice twist. I didn't want it to be overwhelming. That's why I didn't grind it so that I could remove it after cooking.

    Dillo's X-Mas Hot Sauce

I put the pureed ingredients in a pot with one cinnamon stick and simmered it down. A pureed cinnamon stick would have been way too much, so I removed the stick after cooking. Here's what came out of the sauce pan:

    Dillo's X-Mas Hot Sauce

Again I bought a hand full of cactus figs and I had some orange chinenses left. So I decided to cook some hot sauce again. I had some oranges and some tangerines and I had the idea to use them instead of the lemon juice for some acidity. In two days there will be the first Sunday of the Advent...

    Cactus fig hot sauce

It's habanero hot, peachy, and tropically fruity. Flavorwise I prefer batch No. 1. But I have no chance to grow tons of cactus figs in my own yard. I don't have the climate for it. I hope to grow some fatalii next year. I would like to have that citrusy lemon drop flavor with some more heat...

condiment My first sauces, salsa and chutney.....

Very good looking sauces and salsas! It's a good start to follow approved recipes. But soon enough you will come up with you own ideas. Let them flow and keep it going! You're on the right way and of course in the right company here. Welcome!

    Cactus fig hot sauce

I only tasted a little drop of it before it cooled down. The chinense sauce is by far hotter than the baccatum sauces as I expected. The flavor is good but I have to wait until it has cooled down and then again until it has ripened for some time. Colorwise the cactus figs dominate the peppers...

    Cactus fig hot sauce

Yesterday I found some cactus figs in a supermarket and some nice orange chinenses in an Asia shop. So I decided to cook a batch of hotter cactus fig sauce. I used a cup of mead vinegar, half a cup of lemon juice, sugar, salt, red wine, mirabelle schnaps and black pepper. I processed all...
