    Well I finaly got a proper smoker. And Yes, Smoking is Addictive. duck,chicken, sausages I made. Hickory I almost got no peppers this year so nothing to smoke in that area.

    Well it was 35c in the shade for a couple days (20c right now). Yesterday was perfect in that some nice cool breeze was available. Onions, Cod, Potatoes and Bananas, coated in corn flour (tortilla) and spices. Perfect for the bananas so they dont dissolve. Habanero/Cranberry/Pineapple hot sauce.

    share-a-recipe Cranberry Pineapple Hot Sauce.

    Been a long time since I made a Sauce. Cranberries 5 cups Pineapples 9 sticks Apricots dry 2 cups Yaki Blue Fawn Garlic ACV 1 1/4 cup Salt Presoaked dry peppers in ACV/salt so no pasties present. Blitzed, let sit for half hour so dry Apricots (Pre Cut) fully soaked. The Blitz again and store.

    Well my last hot air popper died and no more old style to be found so I decided to buy a proper Coffee Roaster. So learning the process since now you adjust the temps manually etc. Can do bigger batches so saves time compared to my Popper. Real Happy with it. SR800

    Weather still good. Did a couple Chicken Deep fry. Did some onion rings and Banana Fritters. Will do Rhubarb fritters lext, got lots of those lol, Corn flour coating with egg. Chipotle, Paprika Corn flour on Chicken. Scotchbonet/Turmeric/Peaches sauce.

    Allot of Flowering before things growing. Got Apple, cupid cherry, Plum, Gooseberry, Blackcurrant, Grapes coming out before full growth. Elderberry, Hops, Lemon, Onions, Jerusalem Artichokes.

    24 hours in salt, lost 1lb of water. seasoned then put into Drying Box for 72 hours. 35% water evaporation.

    Looked like a nice piece and uniform so trying again. Added Coriander this time, forgot on the last mix. Dont think will get these prices again. Has a nice slab of fat on the back.
