    Chilliworld.com - beware!

Just thought i would warn people (esp in the UK) of my dealing's with this company. They are/were advertising mark's, from thechileman.org, Naga Morich Concentrate & Naga Morich Snake Bite 'Pure Venom', in stock too which i thought was a little strange. They sent me some Naga Concentrate Paste...

What do you do apart from chilli?

What I do for income: I play online poker full-time. 10 hours/day unless i skive. 3 monitors and a 12-tabling "regular" i suppose i would be called. It's actually hard work mentally. Why Chili? Been eating hot food for 20+ years. Lot's of Indian food (no shortage of restaurant's in the UK)...

    Hot pepper tattoo's

Thanks for the input everyone. :) Probably going to go with something similar to the first image, i think it emphasises the "evil" pepper. Maybe a little more flames here and there, and i'll get custom artwork done. Hey chilliman, nice work...i think i'll try to get the pepper to resemble a...

    Herbs & Spices

I'm very happy with the results of my 2 variations of hot sauce, after ony 3 batches too!, but i'm always looking to improve the recipes. I've not as yet used any herbs or spices, so some recommendations of any combinations of these would be helpful. These are my latest recipes (only added...

    Coconut

Of all the hot sauces i've tried, i can't ever recall coconut being amongst the ingredients. I've not seen it mentioned on here either. The thing is, it's used in Indian food a lot, and most curries i've made i use either fresh coconut/coconut milk & a ton of hot peppers - a perfect...

    Help With Measurements

This is my very first attempt at making a hot sauce. I've read through lot's of the recipe's on here, and there seems many different way's to make them. Anyway, i'm not certain of what ingredients work well with what, and what measurements to use for the amount of sauce i want to make. I like...

    preservation Pickling Advice

I'm not sure if this is a problem or not, but how do i avoid all the peppers from floating to the top of the jar? I packed each jar with peppers well, put a large enough whole/slit in each pepper...but they have all "forced" their way upwards in the jar, leaving the one's at the very top not...

    storage Freezing/Pickling

Ok, so i've just pickled around 60 orange habs & 60 scotch bonnet...so thanks for the help on that. I'm considering getting a lot more orange habs to do the same, but as i want to wait to see if my first(ish) pickling experience is a success, i'm thinking of freezing the habs up for a few...

    preservation Pickling Advice

Thanks for the input guys. I'll sterilize the jars in a water bath, although i'm struggling to find a large enough pan as my jars are quite big. So, i'll use the Sarsons Ready Spiced Pickling Vinegar then! Couple more: 1. How long would the pickled jar of peppers last? The longer the better...

    preservation Pickling Advice

I'm a novice as regards to pickling hot peppers, although my first attempt several years ago was a disaster, resulting in food poisening. Instead of making the pickling vinegar myself, i'm thinking of buying some "ready made" Sarsons Ready Spiced Pickling Vinegar is easy to buy in UK...
