Bam's Pineapple/Rum Hot Sauce

made a new batch tonight

first overall taste was hotter than my other batch

ingredients

habs
1 1/2 heads roasted garlic
1/3 red wine vinegar
100 ml spiced rum(2 little shot bottles)
1/8 cup lime
1/3 cup crushed pineapple + 1 tablespoon juice
salt

cooked and sealed in a mason jar right now, just waiting for more woozies to come in and to find a label making program

taste 1 day later:

slightly sweet but not overly
the flavors go well together

heat level is about 7 out 10 after the first day. burn is on the lips and tongue are still burning 5 minutes later with just a little on the tip of my finger..lol

after this sauce has sat for a little while, i will be making some changes for the next batch.

out with the red wine vinegar, i have shared this hot sauce with a few people and they like it, but i only like it a little bit because i can taste the wine vinegar. from now on only applecider vinegar

and the stuff is still freakin hot, one little drop on the tongue leaves you with a pretty good burn

well did you guys ever try this sauce?

i just gave a jar of this to someone and they loved it.

after sitting for awhile, the heat level went down quite a bit and you can really taste the sweetness. i cant taste the red wine vinegar flavor anymore :)

next on the agenda is a smoked hab sauce of some sort
 
Trooper ! Makeing some relly good sauces, envvy ahhh, I think I will have to make some sauce this weekend!

sadly i cannot get the same habs i used in this sauce anymore.

i am down to my last bottle of this stuff :( and my mother has laid claim to that bottle..lol

-you said heat was about a seven...if your seven is the same as mine, thats perfect! Is there an official definition of your numbering system, somewhere?

Yup, it's the standard 10 base system, until you get to the 7 pots and scorps; then the use of multiple +'s come into play. :lol:

Perhaps we should switch to a chilli hexadecimal system. :)
 
This looks pretty good - but a few questions;

How many/much Habs?

1/3 vinegar - is that 1/3 of a cup, or one third of the ingredient volume or what?

Might white wine vinegar, or white balsamic vinegar be a decent alternative to Red wine vinegar?

I have some Bermudan golden rum I would like to use in this.

Not yet Bam....I keep drinking all the rum!!!!
