Quick test....will let it run overnight. The overnight low is supposed to be about 30f.

temp-control/stability for ferm is really important ...
 
it's one of the things that people ALL say was a turning point in their making really good beer ...

I used it once and really liked it as I used it for it's intended purposes.
 
The second time I used it for my last batch of beer.....ooops....read the directions.  Thankfully I always use two thermometers just too make sure.
 
The probes are not intended to be submerged.  So I am on my second set of probes, but that was user error.

Haven't decided if I'll enter my meal, but I'm definitely making one more oven-pie (have dough and cheese etc) tonight, and having freshly ground short-rib and chuck burgers tomorrow ...
