I missed a lot of great food over the last day.

Frydad- The glass of urine next to your can of Busch Light doesn't even take away from the awesomeness of that Bunny Chow.

HabaneroHeat- I bet those wings and curry taste as great as they sound hot! Kudos for suffering through your phone troubles to post that up, it looks delicious.

Lunchbox- Adding that rub and sauce to something as delicious as pork ribs is unfair! I'm thinking about going and grabbing a rack to try and recreate that juxtaposed flavorgasm .

Bootsie- I was looking at piri-piri recipes. They all sounded great, and your dish gives a nice visual after just seeing written recipes. I bet eating that meal on the beachscape you posted would be pure paradise!

Mgold- I've never tried oxtail before...your meal makes me want to try some! That chapati looks awesome too man!

Did some research on this one, and found some REALLY awesome grub.

Suya is Nigerian for shish kabob. Traditionally made with fish, chicken, or beef. I went with chicken.

Meat is skewered on sticks and rubbed with tankora (a Nigerian dry spice rub) and BBQ'd.

Also mixd up a bowl of Nigerian salad that was delish.

Enjoy. I did. I'm for sure doing this again.

Sum's Suya and Nigerian Salad


I had some fun with this throwdown. Did a lot of research and found something that really worked for me.

Suya is basically Nigerian for shish kabob. I did skewered chicken BBQ'd over hot coals... man style.

The meat is rubbed with Tankora which is a dry spice mix.

Tankora:
powdered groundnuts (peanuts)
cayenne pepper
ginger
smoked paprika
onion powder (I used onion salt.)

I then accompanied the suya with a refreshing and invigorating Nigerian salad.

Nigerian salad:
lettuce (shred)
carrot (grated)
potato (boil then cube)
cucumber (cube)
egg (hardboil then slice)
half can of beans (I used white.)
small can of sweet corn
tomato cubed
Cesar salad dressing (I didn't use the creamy kind.) mixed with a bit of homemade habanero powder

Toss and serve cool.

(but the final product looked great!) :)
