After degassing and letting the yeast drop, and a taste, I'm not fucking with diluting it and risking ruining it ...

Pretty tasty ...
So that's good, was worried at first ...

Might be delicious ...

Little bit of sulfur on the nose, but none by taste ... and I guess that will be lagered out ...

I think I'll drop it down to like 35F tomorrow and crash it for weeks ...

I'm supposed to rack off the yeast for this, or keep it for help in conditioning?
 
you are still going to have a bunch in suspension, however the yeast arent whats going to reduce your sulfur, and will not be active at 35 degrees anyways

Dunno. I'm not really sure what I'm doing with this beer ... didn't research it much, and when I asked Wheebz, he said Kolsh's aren't lager yeast, and don't need lagering ...
 
I could have sworn when I did the tiny amount of research that I did do, that it suggested 2-3 weeks at low temp, so we'll see ... since I did use Kolsch yeast ...
 
That's what I read too. Specifically in the brewing great beer book. That's partly why I brewed it with US05.

I wouldn't sweat it until you see it's actually affected ...
 
2nd cleanest yeast I've used so far ... WLP001 was a c-hair cleaner for me, but that's it ...
 
I build my temp control chamber for under 100 bucks
 
used chest freezer on craigslist for 25 bucks, ranco for 45, extention cord for 10, done and done
 
More of a space issue for me.  I try to control the clutter as much as possible, but I am losing the fight.  I could maybe put it in my garage as opposed to the basement.

if you want to make better beer, that is seriously the number 1 thing that you could ever do, its a night and day man
