Those are dried anchos.  First pic also shows dried bahamian goats and ripe jalas - all from the garden last year.

Smoker is fired up and just threw the meat on.

The carne asada marinade soaked up beautifully.

I have a good feeling about these ribs. The chicken is going to be for my other combo entree.
Here's the majority of my other ingredients. I still have to go get the sweet corn though.

The best thing about watermelon is that it helps make some great frozen drinks that don't need ice. Watermelon ice cubes going in the freezer. Margaritaville machine will chop it up nicely.

Ok, so I'm doing this. Figured if i'm out and about outside max the macaw might see me and come home. Wishful thinking, at least he's a free happy bird flying around right now. ANYWAYS, what I planned was the following: Main course: hickory/applewood smoked beer braised (at the same damn time) short ribs nachos with chipotle bacon cream fatalii and pepper powder cheese sauce, brisket tacos with guac. The sides will be grilled corn with an ancho chile mayo sauce and cotija as well as ancho chile potato salad. We'll see what happens. I couldn't fit all the ingredients in the pic, but you get the gist. here's some pics! Oh i forgot. the drink will be smoked pineapple margaritas!

So this is an interesting method for the short ribs. season and grill the onions, grill the short ribs. On the bottom of the smoker there's wood chips, then on top i put the tray and a layer of foil to hold the beer, brown sugar, thyme mixture. layer the grilled onions then layer the ribs bone side up so it can add in that bone flavor goodness. Everything was seasoned with salt, pepper and my chili powder mix.

Should pressure wash the cage while he's on vacation. Have you contacted the local humane society in case anyone turns it in or calls that they found one?
