Das Boot Beefsteak & Waffles with Loaded Beer potatoes
This is a meal I first had in my fraternity house a long time ago. Its a really good combination especially with loaded potatoes to go along with it.
The waffle:
2 1/4 c flour, 1 tsp salt, 4 tsp baking powder, 1 1/4 tsp baking soda, 2 tbs sugar, 5 tbs unsalted butter, 1 1/2 tsp vanilla extract, 3/4 c milk, 1c Sam Adams lager, 2 eggs.
Whisk all the dry materials together. Melt the butter in a sauce pan, then add the milk and beer to warm them up. Whisk the vanilla and the eggs together then pour the beer, butter, and milk into the eggs. Mix it all with the dry materials until it is lump free. Preheat the waffle iron and spray some non stick spray then cook until desired color.
The beefsteak (Salisbury steak):
4 slices of bacon, 2 lbs ground chuck, 1/4 c minced onion, 1/4c parsley, 1 tsp kosher salt, 1/2 tsp pepper, 2 medium onions sliced, 1 pkg of mushrooms, 2 tbs flour, 1 bottle Guiness beer, 1/2 c beef broth, 2 tsp sugar, 2 tsp tomato paste, 1/2 tsp carraway seed, dried aji pineapple and starfish flakes.
Cook the bacon, remove it from the pan, and save the drippings. Combine the beef, minced onion, parsley, dried pepper flakes, salt and pepper and shape into patties. Brown the patties for 4min ea side at medium heat then remove from pan. Add the onions and mushrooms and sautee for about 8mins. Stir in the flour and stir. Then add the beer, broth, sugar, tomato paste, and carraway seed, stir, and bring to a boil. Then reduce the heat and add the patties back to the pan to cook the rest of the way in the gravy. Be sure to flip them over and cover them with the gravy.
The loaded potatoes:
2 1/2 lbs of russet potatoes, 1 c shredded extra sharp cheddar, 1 c Sam Adams lager, 2 tbs sour cream, 4 bacon slices, 1/2 c green onions, salt & pepper to taste
Boil the potatoes. When done drain and add the beer and cheese and mash until the cheese is melted in. Then add the sour cream, green onions, salt and pepper, and crumbled bacon. When serving you can sprinkle some more of the cheese and such on top.
This was a very good and filling meal. The beer in the waffle was a great addition and I feel really made a difference in the texture and taste. The beer really wasn't a very strong taste and honestly, I will probably use it when I make breakfast waffles. The Salisbury steak with the gravy and onions was killer. Its so rich and filling too. The boot of beer was a great compliment to this meal. I was so satisfied after eating this. I will definitely be making this again in the near future.
