I use the same water for brewing as Aslin, since we are on the same water system, but they have their water game down pat. I have been modifying my chloride/sulfate ratios, and especially PH with every batch of beer I brew. The NEIPA I brewed last Sunday is looking/smelling really good. I just hit it with it's second round of dry hops. Mosaic/Gakaxy/Citra, all the way.

You can see the Sulfate and Chloride tests ...

Dialing in that ratio is the basis for the water of the NEIPA ...

So, we're talking about adding some calcium, gypsum, or other salts and dialing in the levels and ratio to create the desired effect ...

I don't think it's going to be all that hard, really ...
 
I am really enjoying the Dream In Green. It's quite fantastic; fresh tasting, a tad sour and bitter akin to rind with green apple with a hint of honeydew, very nice! Totally sessionable and addicting. Delicious!

The thing is, you can build upon RO water, and then it can be really easy ...

I may very well do just that, buy 5 gal bottles of RO water for brewing ...

For 2.5 gal Z batches, you start with like 3.75 gal water ...

Somewhat perfectly, that leaves 1.25 gal RO water - which just happens to be the exact amount needed for a batch of long-lasting StarSan ...

If the cost of five gal RO's through Shipt isn't rape & pillage, that's what I'll be doing here ...

Adding to RO, and just verifying with the meter ...
