BREAKFAST!!!

I was looking for a breakfast thread and never found one that seemed open-ended enough to post on. So here y'all go!
 
Posty up your breakfast if you like, even if it's cold leftover pizza.

Whoops! You made brunch instead? That's cool... it counts.
 
 
I'll go first with a take on a Cuban breakfast called Huevos Habaneros. It means Havana Eggs, but it's not made with Habaneros. In fact, it's not traditionally spicy hot. (Cuban meals typically aren't.) So, I had to SoFlo it up a bit and call it something different.

These are eggs baked over sofrito with butter on top in a custard cup for about 12 minutes at 375 F (yolks are still a bit runny). Then topped with more sofrito and garnished with some cayenne powder, but sofrito isn't spicy hot either. So...
 
Sofrito Caliente
 
(Enough for one serving)
 
1/4 cup chopped onion
1 Fresno pepper (cored and chopped)
1 green jalapeno (cored and chopped)
1 clove garlic, minced
1/4 tsp ground cumin
1/4 cup peeled, cored, chopped tomato
olive oil for sauteing
 
Saute the onion and peppers till the onion is translucent. Then add the garlic and cumin for a minute more. Then toss in the tomato for another minute or two. Salt and black pepper to taste.

Quick and easy breakfast that can set you up for several days or for company and can even be made the night before.

Muffin tin
12 slices of Bacon
12 eggs
Shredded Sharp Cheddar cheese

Oven to 350 dF

Cut bacon in half and line cups

Little sprinkle of the powder of your choice. I'm using some of my smoked Jalapeño powder.

Crack some eggs

Into the oven at 350 dF for 30 minutes.

Add cheese and back for another 15 minutes

Time to make some Hollandaise sauce.

4 egg yolks
Powder of choice
Pinch of salt
1Tbs fresh Lemon juice
1 Stick Butter
Double Boiler

Separate the egg yolks and whisk them till pale while the butter melts in the microwave for a minute. Add the powder, salt and lemon juice and whisk some more. When butter is melter and the water is at a rolling boil place your top pan over the water pan and start to drizzle the butter in, whisking the entire time.

Continue to whisk till all the butter in incorporated and the sauce is as thick as you want it. I got it a little tight this time but that's how my wife likes it.

Breeky the easy way.

Breakfast Casserole

1lb Bacon, breakfast sausage, smoked sausage, left over pulled pork... You get the idea

Potatoes
Med Onion
Red Bell Pepper or
Yellow Bell Pepper or
Hot Pepper of choice
Sharp Cheddar Cheese
Butter
Salt and Pepper

I ues stoneware which stays non stick but if you don't have any grease your Casserole with butter so it doesn't stick. Better yet cover it in heavy foil and butter that for even easier clean up.

Slice Potatoes and place a layer in the casserole.

Then a layer of onion and peppers.

Repeat till you have as much as you want. Place pats of butter around the top and season with salt and pepper. Then into a 375 dF oven for 40 minutes.

When times up spread bacon and cheese evenly around.

Crack and place eggs

Alternatively you can mix the eggs up adding a little milk and do it scrambled egg style.

Back into the oven long enough to melt cheese and cook eggs.
