Yeah onions and 'peños sounds good. Btw eggplants had parsley and nearly a shitton™ of garlic. :D

See, I thought you were talking about the yellow slices that Kraft calls "american cheese-food." I assumed the white melty stuff was real cheese. My bad. Still, I don't know Italian, but that package scares me - - do you know what you are eating???? LOL 
 
I'd swap that out with some mozz, meunster, havarti, or jack cheese and call it pure platinum. Those would go well with the eggplant and still have melty-schmelty points. Dang…. now I have to make that for myself!

There was, i just forgot to say, btw i edited photo post before your question! :D
THP didn't believe that here in Italy we have kraft singles, but we have stores loaded with various kinds of those. I suppose they never killed anyone. I'm not a big fan, but if like that evening i return home late and want some melt... :D

I don't often eat sammies (burgers are just a type of sammie), but when I do, I usually only eat half as-is, then eat the middle out of the rest, as I just can't eat that much bread. Skinny bread = good stuff in my book.
 
That bread does look good. Looks like vastedda or a basic roll put into the panini press. It's not brown on top, but I see the marks, so that's probably why it's thin.
 
Overall, nice burger. I like ketchup!
 
Singles, not so much. :P
