I'm going to Searzall a frozen flatiron steak this week, and then finish it from frozen in the oven at 200F w/ a thin layer of fish sauce ... hat tip Modernist Cuisine blog ...
 
You like fish sauce? And copycat recipes? See if you can do the fish sauce wings from Pok Pok. I think you would like those. And you can probably use the Searzall!

I just did Nolan Ryan ground beef sliders on the flat top with jalapeno wheels and thin
 
sliced onions pressed in on along with mustard, tilly sharp cheddar, and PF Potato Slider buns.
 
No pics.
 
Never happened.
 
Camera broke.
 
And too toasted.
 
Hit the farmers market yesterday and my wife saw some nice ground lamb , so Lamb burgers it is.  
 
I am a purist with beef burgers,  TB's smash burger technique is my favourite way now but lamb has so much flavour I think it can stand up to extras..
