I'd say use dark meat but that defeats the purpose, the only ones that are lean are the white meat, but for me the trick is, make them thin with a good sear. Like white meat turkey sliced, a one inch slice is dense.

Try making a super thin patty in a hot CI and sear it good. Make 2-3 patties like this then layer sauce (BBQ or hot) and cheese in between them on brioche. L&T on top, mayo, S&P, jalapenos.

You get a lot of sear surface area in your bite.

96/4 sirloin ground beef (I hate fat, go on...gimme sh-t)
Minced garlic, onion, hawaiian aloha prime steak mix, minced trini scorp peppers, A1 steak sauce, Bliss Blast hot sauce all mixed into the ground beef. Added more Bliss sauce as I grilled the moo patties.
Tossed on some oinkin bacon for thrills, who doesn't want bacon on a burger? Prepped some shredded iceburg lettuce, and slice up some homemade trini scorp dill pickles mmmmmmmm. And shredded some hoffmans super sharp cheddar. Sorry only 3 pics cuz was starvin!
