Yeah I would be liking to be liking some of them myself. You pickle them yourself TB? Or do you buy them?
 
Time for some tacos. Burritos and quesadillas to follow at a later time. I just made the generic El Paso tacos shells stuffed with seasoned meat, cheddar, tomatoes, lettuce, etc etc. I made that version for the Mrs. and the boy. For me I kicked it up a couple notches with Pex' GT Salsa and then a little farther on one with the salsa and some Incinerator. Holy crap every time I eat that stuff I can't believe how hot it is! Anyway, the pics are nothing exciting, I promise the fajitas/burritos/quesadillas will be better.

Maybe one drop in a quart of Salsa would be fine.

Ok for tonight's entertainment and ridicule, I made steak and chicken fajitas. I had no flank steak, so marinated NY Strips had to do. I made some hot links too while I had the grill on, ignore them.

I used Pex' Killerswarm on the chicken one, and High River Sauce's Tears of the Sun on the steak one.

Heh, in Houston all they have to do to get the cheese to melt is put a plate of it on the table.... Why are Mexican and Tex-Mex joints in Houston always so hot?

The word fajita is the Spanish diminutive of "belt" or "girdle."
TB, are you starting a SAVE FAJITAS campaign? Yes, it has a new meaning, like queso and salsa. It does literally mean skirt steak at Mexican butchers. And the first "sizzling fajitas" were served in TX. But now, it's rolled tacos with four tortillas. Accept it! You already accepted queso is a kind of cheese. :lol:

To answer your questions, no those are Chi chi's brand fajita size flour tortillas, and yes I melted the cheese in the microwave. Is that wrong now too? I didn't want to dry out the tortas.

I did use strip and not flank or skirt. I do know that skirt is preferred. I believe we cooked some of that together didn't we? Or was that flank? I forget.

I think I am going to come up with a complete do and do not list for thp cooking.
 
I went to JayT's for dinner last night, and this is what he served. You can tell it's REAL TexMex because it had sour cream on it.
