food-bev Everythang' Tex-Mex!

aahh hell....I was vacuum packin' the wombats and had some hab and peno cookin' up in the cast iron for dinner...bad juju...I touched my nose and lips.....couldn't kiss mrs. blues goodnight. I'm on fire right now...my nose is like a lava spout.....hosky and tequila is no help...pray for me...

hehe...mrs. blues keeps me honest on the posting. I had 2 reasons for making them. Firstly, it's a Tex-Mex tradition to have tamales Christmas eve and second....mrs. blues loves them looooong time.

Speaking of pineapple.....might be time for a little taco's pastor next week! Another mrs. blues favorite.

I cheat. I thin slice tenderloin or chops, sear it on high, then cover and slow it down. Then I'll add chopped pineapple and some juice and reduce until its nice and caramelized. Then hit it with some cumin. If I'm the only one eating it, it also gets cilantro, diced onion, and chiles too. Absolutely has to go a tortilla, flour or corn, both good....and oh yeah...lots of limes.
