Once its too cold to fry out side I will be baking, I always do a mixture of spices ect when prepping the objects of Fry. Dont have much option for fish here unfortunately and I wont eat anything from the Pacific.

Yup, wont do it inside, oil coats everything since it evaporates easily.
You need a good range hood.

The ductless systems work quite well. The only casualty is the backsplash which, if tile, is pretty easy to maintain.
No tile, need to do the counters and floor next. Working on outside window frames that are crumbling.

I hear ya man! Frying sucks. I use a wok and the mass surface area tens to collect the spatter.
Splatter is the biggest problem, no mater how careful usually theirs a bit of an overflow if you add things too fast andf the bubbles go nuts.
The chicken looks PRIMO!
