food Leftovers Thread!!

Yeah it is usually grated when I get it. The strips of white are usually queso blacno or oaxaca.

I take that back. Queso blaco is more like feta or ricotta salata.
 
But yeah cotija is usually the dry grated cheese on things like enchiladas. Kinda like the parm/romano of Mexican.
 
And oaxaca is like mozz string cheese.
 
Yeah, mine would have done that, if I'd have forked the shit out of it ... I found myself in a bit of a hurry, though, and so I gave it a rough crumble after slicing ...
 
Next time I'll fork the shit out of it ...
 
Everytime I think of forking now, though - I think of D3 forking boneless chicken wings ...

I have a cheese grater attachment for my food processor , I use that for block cheese or if i'm feeling especially lazy I use the silver bullet. That's what I used last night. 3 seconds and a cup full of grated cheese. 
 
Yeah it's dry enough to get to a powdery/airy consistency. Good stuff.

I always forget D's mom sent us a magic bullet ... I've never used it, but they are handy as hell ... I just didn't buy it, so I don't think of it ...

When I was a drinker that was my go to for margaritas because it was the glass and all. Pretty handy. Used mine so much it burned out. Wifeys mom gave us this one with like 10 mug attachments. 
 
I hope to never have cheddar in my Mexican food again ... it doesn't belong ... the "age" on the cheddar stomps on the seasoning of the beef ...
 
I liked the crema the time before last, but liked the cotija even more this past time ...

fresco or ranchero are what I normally use because they are the cheapest. Chihuaha is good too. Just not the ankle biting kind.

Cheddar on Mexican? Why!!!! LOL! Hmm okay maybe the hard shell type taco.
 
I love cheddar and even though I would never put it on Mexican, I can relate. I made some sliders with aged really sharp cheddar and it was all I tasted. It really took away from the beef.
 
I since go for milder softer cheese on burgers, but if I do go for an aged sharp cheese, real provolone is da bomb! (Not the deli slicer stuff, the real stuff).
 
So I can see why you don't use it on Mexican. I say no to burgers too. Yeah, weird. But same idea. Takes away from it.
 
Momz served mexican w/ shredded cheddar or later the four-cheese mexi-blend most all of my life, that I can remember ... part of our OEP experience ...
 
It was within the past couple of months that I first tried the yogurt-like crema stuff, and it was good ... but the dry crumbly cotija right next to it was better yet ...
On burgers, yes ... I prefer muenster, swiss etc ... shit, I prefer a slice of 'murican cheese to something heady ...

I enjoy provolone ...I don't like the smoked variant as much, typically, unless it subtle - in which case that *can be* the best ...
 
It's my favorite cheese to eat plain ... I kind of like it when it gets a little bit dehydrated ... I also like the way it melts ...
 
Try the one I posted, it's not smoked, aged to perfection. Awesome on salads and burgers. Melts like a dream. The deli slicing stuff has no flavor to me, well, not after you try this. :)

I don't even know if i've ever tasted Auricchio... I bet it's good, it's quite expensive, when i am going to buy at the end i'll go with something else (at least in that i've plenty alternatives :P). Ok, now i want to taste it, next time maybe i'll buy some.
