Does that mean you ship? hahahaha

I think FedEx overnight will work just fine. LOL

And I promise (:fingerscrossed:) to share with SL.

You know....my brother lives in Seattle. I've been meaning to get up there for a visit!

OK ... last night, first ...

I have been thinking about the moz burrata since trying the expired one, a little bit back in time ...

I reacquired it a few days ago, because I have this idea that it'll be delightful w/ the dried edges of the brisket, on pizza ...

Well, it didn't make it to a pizza, because it was had on English muffins without running the oven ...

Round one, was last night, w/ Smokin' Banshee ... a little tribute to Essegi, whom I found this magical cheese through, and who makes spicy Italian dishes w/ real heat ... this Smokin' Banshee is delicious and damn hot.

The first I ate w/ a fork, perfect little bites ... nutty coffee buttery good ...

The other half had to be hoisted up, it was too good to fork ...

It's beautiful. A smokin' hottie ... but those slices were salty "point" ...

Now, I've thinking about it all day, dough's ready to make the pizza version, but you know what ... fuck it, it was awesome, let's do another w/o cutting any corners this time ...

First, proper golden muffin toasting by way of Searzall in lieu of quickie brulee torching ...

Today I went ahead and carmelized the bbq marinade to the bits, and they're all tasty chewy little dried bits from the flat - if you know, then you know ...

It's going to have to be the Scotch Bonnet ...

ImageUploadedByTapatalk1419901618.713023.jpg

I applied some heat to the cheese today, to good effect ...

I have to tell you, coffee-rubbed brisket and burrata are made for one another - this will be riffed upon time and again ...

Thanks Essegi, CH, Booma and all of the other EU and AUS and Americas folks who come and share foods from their lands!

Ever ponder what to do with the leftover ham near the bone before you wrap it up for an epic bean dish later?

Here's an idea........HAM-BACON (where you treat the leftover ham like bacon that needs to be fried) sammiches!!!

Bacon.....or ham?

Either way....it's delicious!!!

LOL ... cold tortilla brother from another mother ...
I admit that i haven't understood that... :P

Btw... In doubt if post here, pescetarian or pasta thread...
But since i didn't cook that fish, sorta "acqua pazza", i just took it and used for my pasta.
I remember when i made a thing nearly stealing from the pan and the boss called it "a JayT move". I don't know if this was meant as a compliment, but i liked the sound of that!

So the fish:

That was meant to be eaten with bread.

I added half of a teaspoon of fatalli powder and a crushed piri piri.
Then i took some pasta from an already open pack to finish it (so this has some more leftover feeling). I had paccheri:
