Lamb Head Tacos.

I was making some soup, and I pulled the brains, tongues, eyes, and cheek meat off of these simmered heads. I realized the soup wouldn't be ready for a few hours, so it was time for a few tacos to stave off the hunger.

The meat is all pieces of the head minced together, topped with pico de gallo and cotija.

Any person that would openly criticize someone else food, should surely be able to take criticism of their lack to see that refusing to eat a tongue of a dead animal on the grounds that you won't eat anything that will taste you back; is, well, ridiculous imo  ...

how can you not see a larger box with smaller organisms 
 
every time you eat fresh produce,
every fruit, every vegetable, everything that has not yet been sterilized, has things living on/ in it   Enzymes and Microorganisms, many of them extremely beneficial to your health and gut microflora   .  OMG what ever will we do   . 
do you ever drink beer  :?...  HMmmm    :thinking:    yeast is alive... 
do you ever eat sauerkraut ?    Hmmmm   Lactic cultures are alive... 
ever eat fresh sourdough bread ?  Than you prob came back from the bakery with live yeast on you and your clothes.
Deal with it, things are tasting you back whether you like it or not... 
just because all of them don't have teeth
