food Memorial Day (Two-Week) User-land BBQ Contest

Sliders two ways-  Surf & turf  and the "wafflebum classic" as it's now called. 
 
Grind was short rib,brisket,sirloin. sourdough buns. bbq sauce simmered with some pureed mango. Local bacon on the classic.Grilled avocado,local cheddar. Fresh gulf shrimp on the Surf & turf. Marinade for shrimp was fresh garlic,ginger,smoked hot paprika,lemon zest,rice vinegar,soy,and a fresh serrano from my pepper patch.  
 
Start with some of my own homegrown shiitakes-

Sauteed in bacon fat with shallots, fresh garlic and fresh rosemary-

Just some simple beef ribs for my little bbq entry, spent there time in the old weber kettle, snake method, yellow box and cherry wood, some meatchurch rub. Perfect. Crappy iPhone pics, the sun goes down way to early at the moment

WB - Holy shit those sliders look good. Never have seen shrooms and shallot look so good. Really nice pictures, too - which always help (me). Wow.

I'm kind of a weird - dramatic pause for your enjoyment - about foods that get my fingers messy/sticky ...
 
If I'm going to eat some wings, that's the texture and finish that I prefer ...
 
I also like the taste of a little charring in my grilled food, so you're in there, too.
