I have been wanting to pick up a really nice set of knives myself for some time. 
 
Not to make a short story long, I chose Shun. (I love Japanese steel)The premier line to be most exact.

The feel in hand in both weight and balance is awesome. Aesthetically speaking, I like the wood grain handles contrast with the Damascus blades. I had to rely on hundreds of opinions and reviews regarding edge sustainability and cutting ability. These knives also appeal to me in their shape and blade profiles. To me these knives have win win written all over them.

I have the 7 in Santoku and the 4 inch paring knife in the Premier and love them.
 
Sounds like they are using an inconel alloy coating. Weird thing about inconel is that it gets harder to work/sharpen each progressive time. I can't
wait until someone comes out with that new gold/titanium alloy (that is 4 times harder than pure titanium ) knife . I am hoping to see Qcarbon consumer goods sometime in the next decade too .
