Just pulled the trigger on the Kai(made by Shun) 6 1/2 Nakiri knife for $31 on amazon.

I really wanted a Damascus Nakiri with the hollow edge but couldn't justify the $$$.

I have been wanting to pick up a really nice set of knives myself for some time.

Not to make a short story long, I chose Shun. (I love Japanese steel)The premier line to be most exact.

To me these knives have win win written all over them.

I have the 7 in Santoku and the 4 inch paring knife in the Premier and love them.

Sounds like they are using an inconel alloy coating. Weird thing about inconel is that it gets harder to work/sharpen each progressive time. I can't
wait until someone comes out with that new gold/titanium alloy (that is 4 times harder than pure titanium ) knife . I am hoping to see Qcarbon consumer goods sometime in the next decade too .
