Yeah. Normally, you would want to rack it over before it's totally fermented so it will release some co2 and purge the o2 out. Just like the bottling bucket you don't want to splash the beer at all. Rack it over, and yeah, the less headspace the better.
If it's totally fermented (terminal) you would want to purge the air out if you wanted to be perfect.
 
Got it. The only way to know if it is terminal is through gravity readings? I will not bother with this kit....but maybe with my next brew.
 
Woot!  Just talked to a dude on Craigslist about another keg and CO2 tank.  Plus he has a couple of carboys and a starter kit, so my bro-in-law is going to go in on it with me and take the kit and I take the keg stuff and 1 of the carboys.  I told him if he starts to brew he needs to get on this forum :)
