I love that quote and it will try my best to remember it through this new grow. So, I'm going with only 18 varities this year as we're looking at moving to a larger house if not buying this summer and I really don't want to have to try and haul a ton of plants when we do. the ones I've selected are:

Alot of them are ones i started last year that never grew beyond a certain point and I'm pretty sure that a lot of it was my new grower mistakes. Since I really want to try them I'm giving them a grow again. Once again, thanks to everyone that helped me getting started with gifts of seeds and to all on here thanks for leaving your incredable words of wisdom that we can all learn from.

Looking really good Bill! The weather must be past the tipping point out your way. I'm liking the looks of the smoked haba-peno sauce too.

Thanks Andy. I'm glad you enjoyed the Brick Joke. The brick joke has been used in TV and Movies for years. SNL is one of the biggest users but I think the best one done to date is the one God pulled on Satan. Jesus said,[background=rgb(249, 253, 255)] [/background]“Destroy this temple, and I will raise it again in three days.” Then on the morning of the third day after the crucifiction and I'm sure Satan woke up that morning hung over after partying thinking he'd won, one of his minions delivers the message and I can just see him saying, "What do you mean the tomb is empty?" There it is, Brick Joke :)

BTW, the Sunday after Easter in our church is called Holy Hilarity Sunday.
 
Those seedlings really look like they liked the bottom watering. They grew a lot! Those ferments look incredible. I would bet the flavors are so rich not only having so much time to marry, but also with the added depth and complexity added by the fermentation process. So happy to see the pepper forest moving along at the RM establishment!
 
Nice harvest Bill, I've been saving my little ones for sauce as well (Thai Hot). I'm almost to a small baggie full but it's slow slim pickings. Maybe 2 to 5 every few days or more, I guess if we had like 50 of these little plants it would be faster, hehe I only have 2 plants.
 
Then your ahead if me Ramon, I only have 1 plant.

I have done both but I do more with a starter than wild as it ensures that I get the specific bacteria in there that I want. With wild there a chance of off flavors coming in.
 
I hear ya. I like the cold, wild, no salt, ferment. Straight from plant to mason, lid on loosely, in a cold, dark basement. Nine months later you have gold. I get the best flavors that way. What strains you using?
