It works for the sweet element when you need to balance salty, sour, etc. Especially the real stuff because it is not acidic, and it is thick, so when people talk about a balsamic reduction, with this stuff, no need, just pour... :)
 
It's great on the right things, right salads. Sometimes you need more acid and can use some other vinegars with it.
 
Sliced up a beef roast I made a while back for sammies.  Here's a philly style cheese steak.  :)
