SKULLBIKERS 2021 FLOG

A new year, so a new FLOG(food log).
 
I previously called this my "healthy stuff" thread, but there is more to life than just healthy stuff. Sometimes a person just wants to eat something that tastes REALLY GOOD!
 
I just made up a new batch of kohlrabi kimchi, very loosely using this recipe:

I didn't use the little kohlrabi that you buy in the store, I used the KOSSAK KOHLRABI that I grew and just picked. Here is a pick of 3 of them but I actually ended up using 4.

I didn't have any Daikon radishes so I used 2 of these Sakurajima radishes.
2025 grams, I won't use these again as they seem too mild to me.

I also used 4 lbs of carrots and since I didn't have any green onions I used 3 LARGE red onions.
I mixed it and the paste in a 12 qt bowl and it was nearly full to the top.

I've been rotating these two lovely dishes into my diet lately. The FIREWOK pretty well lives up to its name. I like both of these. Today I will feature FIREWOK.

It comes with a noodle puck, a packet of spice powder, a little packet of vegetables, and a packet of Fire Sauce.

I dump all the packets into the container along with about 2 oz of my own Biker Billy Jalapeno hot sauce. Put the noodle puck back in on top of all the good stuff, add water(I actually add to about 3/8 inch below the fill line because I don't like it soupy). Microwave, I stir mine half way into the cooking time.

OK, starting today with a nice large(24 oz mug) of ice cold Nitro Mocha Coffee.

Then, a little bit to eat, 2 thick slices of sourdough bread and my Rocoto Montufar jelly.

As soon as I finish breakfast I'm going to cook and finish up this 1/2 gallon of Antep Aci Dolma sauce  ferment. This one has been going since May 25, 2020.

This morning I took one of my 2 1/2 pound Kossak Kohlrabi and made some Kohl-Slaw.
I peeled and cut up the kohlrabi and ran it through the good ol' Kitchenaid food processor with large grater in place. Then I grated a bit over a pound of carrots and 1/2 pound of radishes. I put it all in a bowl and put a bunch of coleslaw dressing on it and mixed it up. 
It made 1/2 gallon of slaw, and man is it good.

I almost like the taste of the kohlrabi slaw better than cabbage, but really good either way. I always add the radish and more carrots than most recipes list. I personally like the sweeter, creamy sauce best and I hit it hard with medium ground black pepper.

When animals of HFD group become obese, they were given pineapple juice along with either HFD or normal diet. Blood biochemistry, liver and muscle gene expressions were analyzed. HFD induced significant elevations in body weight, body mass index (BMI), body fat accumulation, liver fat deposition and blood lipids while juice restored these parameters near to their normal values. Juice significantly decreased serum insulin and leptin while adiponectin was increased. Juice administration downregulated the increment of FAS and SERBP-1c mRNA expression in liver and upregulated HSL and GLUT-2 expressions. The muscular lipolytic CPT-1 expression was upregulted by juice treatment. Pineapple juice, therefore, may possibly be used as anti-obesity candidate where it decreased lipogenesis and increased lipolysis.

Sooooooo, in simple terms, if an old, fat guy with a high fat diet drinks raw pineapple juice he will become skinny again! Is this correct? Next question............how much juice per day?

If you're an old fat rat, it should work :D
 
"Pineapple diet", lots of hits... Temporary and short-term result imho. I've noticed to drop a bit of weight when I increase my pineapple consumption though, but the best solution would be... you already know ;) I normally eat at least one pineapple a week, usually two, but at times daily. I can now have them at U$1/pineapple, or four for U$3.
 
And the goodness has been preserved. With most of the brine drained off and the jars packed I got 10 pints of relish(1 in the refrig. and 9 in the photo).

And, as long as I was in that mode I canned up the Kohlrabi Kimchi. Packed in the jars i got (12) pint and a half jars(same here, 1 in frige already).

I took the Kossak Kohlrabi I picked(post #27 in my GOLOG)   http://thehotpepper.com/topic/74544-skullbikers-2021-everything-but-peppers-golog/page-2    and made another batch of Kohl-Slaw(I'm eating a bowl of it as I type this post).
First I took my ceramic peeler and cleaned off the outer skin. Less 6 oz for the bowl so about 12 oz for the composter ad 3 lbs 10 oz for me.

Weight of all veggies less the 1 lb 10 oz for the bowl equals about 6 lbs 4 oz of slaw.

Then get the mixing gloves ready and pour in the sauce and throw a significant amount of pepper on it.

Then just reach in there and mix it all around.

Put in the jars and tamped down it came to just short of a gallon.
