food STEAK!!

I fired up the gasser with the Grill Grates for some ribeyes tonight. I cooked the steak too much or let it rest covered too long as it was a little over done but this was one of the juiciest steaks I've eaten in a while.

I don't think I've ever seen tri-tip here but that cut looks fatty and should make a good steak. I see people always cooking them as a roast sliced thin.
 
You should try picanha with that cut.

I love knowing if TB put this in his mouth he would be California dreaming.

Bottom sirloin generally isn't like top sirloin, in that it really doesn't have that minerally flavour that can be off putting to some. I would put the flavour and texture of a well marbled tri tip up against a prime strip any day at about a fifth of the price. You do need a good source though.

I cut them into more uniform pieces and hit with homemade steak spice + my flake blend after coming off and resting.
