The ribs were absolutely divine.
With the help of Chelsea I was able to do a true blindfolded taste test to determine not only which one was which, but also which one was better.
Drumroll please..............
SRF Kurobuta wins hands down.
The SRF had a velvety texture and deep rich porky flavor...whereas the store-bought ribs had a lot more connective tissue that did not break down completely. The bark developed better on the SRF too. Store-bought was delicious but SRF was exceptional tonight.
I snuck a taste of bark off of the tip of the spareribs.
The SRF are the longer ribs and the store-bought are the shorter meatier ones.
