Sorry to break hippy dream, but secret ingredients are bacon and mortadella. You could always avoid that. For me it's good as it is.

Here with butter, sage and cream:

I like this even better, really good stuff!

The start to a Ragu style Bolognese with Pancetta, and equal amounts of both Ground Veal and Fresh Italian Sausage..........and the kicker is a handful of Red 7/Pot Flakes. This sauce will get simmered for 2 hrs on low.

Plating shot (without cheese.............nor utensils....ha)

Here's tonites leftovers.........Baked Mostaccioli

Warning! 100% hippy compatibile food!

A classic: trenette col pesto alla genovese.
I suppose you know that one, btw it's basil, pine nuts, cheese, garlic, some salt, evo oil, all minced and mixed. Better using loads of garlic.
Little cheat: that pasta is called fettucce... Maybe is a little bigger than trenette, but more or less it's the same thing...
And a trick: 5 mins before tossing out pasta from water add cut potatoes. It's excellent with pesto.
I've added some pepper powder and it's really good along pesto.
I've found that homemade is great, bought one... Not really and sometimes canned one relly sucks (or i was unlucky)...

As other classics, good food indeed.

I really don't eat much pasta Essi but I love pesto loooooong time.

The more garlic the better.

I'd take that pesto and slap it on some whole wheat bruschetta with some sun dried tomato and really good olive oil to drizzle on it.

But since I'm fantasizing out loud, just gimme' that plate of pasta di pesto.

mangio!
