food The Drunken Chef

We always strive to do our best, even while imbibing. There's a lot of good food posted in throwdown threads as well. Welcome and enjoy.

Heeeere we go!

I got some green & ripe jals & green & ripe habs. These are all from my balcony garden :). The peppers aren't very big, but that's ok. Just from cutting them up I can tell they're going to be WAY hot. Also pictured: chicken simmering in enchilada sauce, a mix of cream cheese, mexican shredded cheese mix, & a splash of enchilada sauce. My problem w/ the batch I made for the throwdown was that the filling ended up too dry. I used too much chicken/not enough cheese. I'm trying to rectify that this time around. Oh yeah, & beer! I get a three day weekend, woo hoo!

OK, I have some chicken to shred. I'll be back soon.

Well I was hoping this would be a prettier finished product...but here are my finished poppers:

They're so damn hot it's not even funny. Even the green habs are hot. Sooo good though, & a lot more gooey than my first try @ the chicken enchilada poppers.

The Saturday Night Fever is beginning. Round one poppers. These are large jalapenos stuffed with a mix of two different hams, cheddar, minced habs, cilantro and homemade habanero sauce. Wrapped in bacon and sprinkled with rub. Booze shot not included on this one, I promise booze in round two. Stay tuned.

These are a little treat called Chuck Delmonicos. I marinated them in soy sauce, olive oil, balsamic vinegar, worcestershire, fatalii sauce, steak rub, cilantro, onion, garlic and whatever else I forgot. The first shot is just as they went into the CI. The beverages were a vodka mojito tea, and a Dogfishhead Midas Touch.

I browned them on the stove and then into a 450F oven for a few mintues to finish. This is upon removal from oven. Only one beer was hurt in the filming of this documentary.

Finally, the money shot. A perfect medium rare, and a 90 minute IPA.

Awesome show JayT! The poppers looked kickin' and I'm sure the Magic Foo was lettin' itself be known in that cilantro marinade for those CI steaks.

Props on the hurtin' of that Miller Lite. That shady punk looked like he deserved it. I can hear your thoughts as you put him on the pan...

"DANCE Mo' Fo', DANCE!"

Bring on the Foo!!!

'Lawd have mercy JayT. Excellent slab o' beef. Perfect MR too, just the way I like it. Kudo's on recognizing the Florida Posse righteously with Drunken Can Kung Fu. I won't be able to post pics from the Blues Kitchen until tomorrow. Late start giving the hornworms on my hab and pequin plants teh Freddy Mercury poisoning.

You had me at mojito!

Salute', TB.
