food The Drunken Chef

Awesome steak & poppers Jay!!!

Since I did a lot of going out & not drinking @ home this weekend I have some yummy beer left in the fridge. I've been craving lox & cream cheese on an english muffin. I think this would be the best thing to use my carribean red's on. This will be dinner.

Hey ya'll. Many strange goin's on last eve on the THP. I'm much obliged to be able to contribute to the carnage. Had some leftover chix that I tossed in the cast iron along with shallot, garlic, habanero, rotell toms, and some foo foo greenage. Slapped it all on to a tortilla with some cheddar and hot sauce. Tres bon!

Here's some of my party guests...

Get your Drunken Chef on ya'll.

Salute', TB.

Damn damn damn!!! That looks great and I am ready for a mini throwdown with you TB. I have some leftovers that are going to become Quesadillas very shortly. Problem...........we just got back from the lake and the missus went shopping - with camera in her purse! Cursed woman. I will have to wait for her return to make the madness. It will be leftover popper filling (smoked turkey ham, spicy ham, cheddar, habaneros, cilantro, and hab sauce), and a broasted chicken breast that I plan on dicing up with some habs, serranos, jalapenos, bacon, bbq sauce and lots of cheese. I guess I will sit here and drink vodka iced teas and Keystone Lt until she returns. Oh by the way, I have some Bacon cheddar cheese too...

BUSCH!!!!!!! AMAZING!!
TB and JT, you guys BROUGHT IT! this weekend!
JT, that Dogfishhead 90 min IPA is like candy! I love that stuff, the closest I can find (afford) down here is busch light. Oh well. Seriously good suds! I love the added habs to the jalapeno poppers. It's like a spicier version of terducken.

TB, damn dude, bacon cheddar...busch beer, parsley foo foo, well done! I get hungrier every time I check this thread! Your beer selections are like a trip around the world.

As for the bobble heads, they are currently in production, but the damn warden wont let me have my chisel back after the incident involving my poster of Rita Hayworth. Stay tuned.

Yeah, mrs. blues refuses to eat leftovers unless it is fett alfredo with chix and mushrooms. I don't eat bread except on the very rare occasion. There is nothing that I won't slap on a tortilla, well except pizza. I have even been known to throw leftover chinese on tortilla's. Mongolian beef and cream cheese quesadilla's rock!! Last sunday i bought a whole side of sockeye salmon and turned it into fried cakes. Ate 'em for 5 straight days in fish taco's. I eat so much fish I'm starting to get gills!

Hmmm...leftover throwdown....sounds good but Quady is purty' damn good at that.

Bring on the pics!!

Salute', TB.

I'll rock it whenever she get's back with the damn piccy taker. Until then I will be accumulating Keystone Lts for the photoshoot. Just for the hell of it I just put together a couple of bottles of pepper vodka. One with some semi-ripe jalapenos and red serranos, one with a lone angry naga. I'll get pics of them as well. I plan to do a whole array of pepper vodkas this year. Fatalii, Habanero, Thai, etc.

ahhh yes. I'm picturing a Keystone Drunken Can forcefield to contain the hotness.

You stash your vodka in the freezer like I do? If not, you'll need it for that Naga swill!

Salute', TB.

Well, I do, but only one bottle at a time. I can't get 6-8 bottles in there. I'll leave them out for a month or so until all the peppery goodness is extracted and then put them in one at a time. I hope this naga vodka is drinkable. I am a bit scared of it. I ate it's brother whole and SWEET JESUS ON A POGOSTICK that was hot!

Damn that stewed chicken taco/burrito looks da bomb!

Hmmmm...

I just bought torts again, and fridge is pretty full...

.o0(O)~(O)0o.

Just had idea for a sweet onion and fresh basil potato salad w/ bacon...

Since I mentioned it here, I will post it here: Pepper Vodka. Like I said, bottle #1 is a bottle of 90 proof vodka with a lone angry naga in it. I stuck a fork in it several times to unleash it's wrath.

Bottle #2 contains the same vodka with four semi-ripe large jalapenos and two red ripe serranos.

Stay tuned for Fatalii, Habanero/Scotch Bonnet, and Thai vodkas.

DAMN! Bossman was pretty blitzkrieged last night huh?

This was a good weekend for the drunken chef thread! Made these crabcakes up on Friday night, but the interwebs wouldn't work in FiveStarville. Then out for some waterfall swimming and mass consumption of alcomahol yesterday, and the Inglorious Basterds show last night, so no piccys till today.

Got a pound of Jumbo Lump crab and folded in some bell pepper, mayo, Ritz crakers, green onions, garlic, mustard, and Worchestersrhsshshire sauce.

Pattied it up and a quick dredge in flour...

Gettin GBD in the cast iron...

Money shot with the Old Granddad. I put these on some mixed greens with some lemon/butter asparagus on the side. Topped these with a homemade tartar sauce with 4 Aji Lemon Drop chiles minced up fine in there. The lemon drop tartar sauce really had a great flavor and heat, but didn't cover up all that crabby goodness.

Sorry for the lack of consumption piccy. After the first bite, my drunk as decided it was too tasty to put the fork down and take another pic.

AW MAN 5*!!!!
Geez that looks great! CI for the crunch, aji in the sauce for the spice.
Wow.
Hard to believe they named a STD after those delicious buggers!
bonus with the old-granddad. I haven't had that in a while. I still have a plastic bottle of old-crow sitting around here somewhere, though.
Maybe I'll throw a pepper in it ala JT. That looks mighty tasty. Do you just shoot it, or use it in drinks, JT?

I ended up using crispbread crackers instead of english muffins. Here are the crackers, lox, carribean red & orange habs, cream cheese, & beer. This is a damn fine Sunday snack.

As always, sorry about the crappy cell phone pic.
