Schweeeeeet JT - love me some philly cheese steak from time to time.

TB - you SO have to fix that when I come down your way!
 
Got an ear infection so there goes my whole easter holiday of diving. What else to do? Get drunk and cook! :D

Felt like baking (myself and food lol) so I made some Chilli Cheese Jalapeno Bread

First 10 min mixing was Bakers flour, pre activated yeast and water with honey.
Proofed in 32 C water for 45 minutes

Final 15 minute mix I added:
1/5th Old El Paso jar Jalapeno, roughly chopped and 2 TBS brine from same said jar
1 finely chopped Chorizo sausage
1/2 Cup Tasty cheese
1 Tbs Spicy BBQ seasoning and another 1/2 Tbs on top of the bread
1 Tbs Dried chilli
2 cloves fresh minced garlic

Proofed in 40 C water 20 minutes

Went to Costco yesterday to get a ham and saw a big bag of little haricots verts to go along with the ham, potato onion cassarole, yams and apples along with croissants, I had too many green beans.

So I haven't made any cold canned green beans in a while.

Grabbed some Caribbean Reds out of the freezer and went to work with some HBD hab salt, pickling spice, lots of garlic, pepper corns and into the frig for a couple of weeks.

Plating is messy but it sure tasted good...I really like the chipotle rub for the pork...it was too hot for my sweet wife but alas that is why I made the less hot version...and I know someone is going to give me sh** for no alcohol in the pic...give it a rest...it's Easter...

Today as we all look at the different threads on this forum, let's think how fortunate we are to have what we do and pause to think of the people that are without the most basic of sustinance...hot peppers...amen...
 
DTS, there is no bread in the world better than chile/cheese bread, that looks exceptional. Get out the butter, I'll be right over, But where da booze???????????

Amen to that AJ. This is DC not the TD so plating/schmating, I'd vote for that in a heartbeat. I'm dying for some fresh corn and the asparagus looks exquisite

Logchief, you're basically doing a cold packed pickled green beans? Never been much for pickled things (unless it's me...:drunk: ...) but always up for new things.

I think sometimes people get turned off to some type of food (like pickled green beans) because they may have not tasted a good home-made pickled green bean. We're discovering tons of new things that taste so great when homemade, but the restaurant/commercial versions stink.

Doing them cold like that keeps them really crisp, takes at least a couple of weeks in the frig for them to get real good.

yes, that is a 7 pot bloody mary with some Billy Biker Chipotle powder in it...absolutely delicious..

LC~ I am always looking for ways to use up the gazillion greenbeans in the garden. Gonna jot this one down. Couple weeks and it will be crispy hot eh?

Hey McHottie, I saw those jars of home-canned green beans for dinner a few days ago! We have a few of those in the pantry and they are the BEST!


JayT- I'm glad I saw your post as I was going to include a bottle of DuvallDave's sauce in a package coming your way. Now we can keep that jar for ourselves! Love that stuff.

Aw, good times today,
picked up a truck-load of tree-trimmings, put the 12-year-old into the driver's seat of the stick shift....lived to tell the tale...even after the mole hills.....~~~~bouncing around the field~~~~ (OMG! Hang on to "the Girls"!!)...... smoked ribs and spicy potato salad for dinner....It's All Guuuud!
