food The Drunken Chef

Hey ya'll! Drunken Chef somehow managed to not destroy The Blues Kitchen last night. Been awhile since I had any actual meat so I pulled a couple of cube steaks I had ratholed in the freezer for a chix fried steak sammich. Since I was going to crank up the fryer, might as well throw in a few pickles as well. I'm a bit worn out and tired on the normal burger bun 'thang so I picked up some cheese bagels from the local grocer. These were more bready and less bagelesque but seemed to fit the bill. While frying the CFS, the meat seemed to just about double in size and it became apparent that it would not fit on the bagel, so opted for an open face. Add some pequin sauce and blue cheese dressing to the bagel and top with the CFS and melty cheeses. I just can't get away from those damn pickles!

Here's a couple party goer's....the Hornito's Anejo is a stray from my normal reposado and only cost a couple shekels more. $27 bucks I think, but 'Lawd have mercy it's good. The color comes from racking the tequila into sherry casks and the flavor hits you up front in the nose and the back of the palette. Tasty tasty. This is definitely a sipper as you want to savor the sherry like goodness.

I know the CFS police would issue a ticket for no white gravy but hey...I'm just not crazy about it.
The pickle hotness is a perfect match for this sammich too. This combo should get the Nobel! Yes really!

Enough meat for me already...I need some fish tonight...but something different...

I'll be here tonight...same bat time, same bat channel...

chicken fried steak w/fried pickles looks damn tasty.
well if I read it right they're fried pickles but kinda look like poppers, so kinda confused if they're pickles or poppers ?

Pickles. But I have done the same thing with 'peno's. Cut them in rings, dredge in flour, eggwash, breadcrumbs and then into the fryer. Fresh 'penos were just okay. Do the aforementioned with the canned pickled 'peno's.....out f******* standing! Dip 'em in ranch or blue cheese dressing. Same with the pickles that is...if you can wait to dip them.
 
Hey ya'll, last eve I continued reducing the rathole of items from the freezer. This time I had some halibut that needed to go away. The oil in the fryer was gettin' tired but I reckoned it could go one more time for some beer battered butt. I dredged the butt in flour and pequin powder, into a beer batter and then into the fryer. Sliced a green chile cheese bagel, melted some sharp tillamook and tah tah sauce. Hella' good sammich! I was almost tempted to fry up some bacon to top the butt with but...nah...no need to tempt the cholesterol police.

Holy Crap!! TB!!!

I haven't stopped by the drunken chef in a few days, and I just blew a load on my keyboard looking at the Spaten Mini-Keg.
Does Natty-Ice make one of those?
For the record, I HAVE had that beer in Germany (Spaten, NOT Natty Ice)!

JT, can I mail-order some of those crab-cakes? Flash freeze and overnight mail!!! Looks awesome! Not too sure about your beer selection. In my world, anything that fancy should just be homebrew!
If I don't make it myself, I buy the crappy stuff.

I have thought about doing a YouBoob version of Drunken Chef but I'm not much for editing skills and the like. 'Sides....I'm usually drunk! Guaranteed though that if I did it, you'd laugh your a$$ off!
 
decided i was going to make some poppers but wanted to try something new. so i took the skins from a few chicken quarters and wrapped the poppers like it was bacon. stuffed them with a chicken and cheese filling and threw them on the grill and basted them with a defcon 1 and bbq sauce mix. i kinda forgot about them while i was getting another beer, and they burnt a bit. they still turned out good but i want to tweek them a bit.

Just got back into fishing since seeing all the fish dishes TB posts in here. I figured with the price of fish around here it's just dumb not to try and catch my own. We'll see what comes of it.

ABF- chicken skins in place of bacon. Never thought of that, but I'm sure it works awesome. This is probably a good reason to skin my chicks before I beer-can roast/smoke them.

Hey ya'll..The Blues Kitchen is open for 'bidness. Cracked a hosky awhile ago and a 6.5 pound pork should is staring at me passionately. I've got some chile powder, pequin powder, crushed dried habs, garlic, mexican oregano, brown sugar, sea salt.......maybe I'll turn it into a "lotion"...

Buffalo Bill..." it rubs the lotion on it's skin....."

My brujo recommends smoking the poke' tomorrow.
 
Hahahaha ya'll....Drunken Chef was busy in The Blues Kitchen with blackops off the reservation goin's on as per the next throwdown. Suffice to say alcohol was consumed. Chaos created and mayhem ensued. I did manage to remember to take a piccy of the beer battered fish taco's I eated while performing said blackops...

I love beer battered fish. What kind of fish was it? I was just thinking about making some of that again. Gotta get me some cod.

Halibut. I do keep some frozen breaded pollock filets on hand when I don't feel like cooking (which isn't often). Not bad for store bought and makes fish tacos crazy easy to whip out.
