JT, I love biscuits and gravy! That looks awesome, gonna have to try it with cheese biscuits next time. One time in a pinch, I tried to make it with some morningstar vegetarian sausage my wife had in the freezer. It didn't work.

TB, were you going to share those 6 flanks of salmon, or were you just bragging?

About time you hooligans surfaced. mrs. blues is laying claim to almost all of the salmon. I can only imagine the mayhem and chaos you and Sum are scheming.

You caught me, but it's the WHITE WINE you have to worry about. The red will just make them smaller for awhile and potentially make you say things like, "You bet your ass, one day I will have a beret on!"
 
Hey ya'll live once again from the big dry ditch and The Blues Kitchen. Yesterday I picked up some nice Alaskan cod. I also had some shitaki's and asparagus I wanted to use up so I fired up the cast iron and started melting some butter to saute' some garlic. Got that all mojofied and tossed in the asparagus and shitaki shroomage and sundried toms. I then dredged some cod pieces in flour and added them. Flipped 'em once and then hit it with mae ploy sweet chile sauce, heavy cream and a combo of fresh cracked black pepper and pequin from my pepper mill. Reduced that all down and added sea salt to taste. Halfway through that process I was going to start a pot of rice but I got impatient.....screw it! Where 'da tortilla's at?

Well, all this talk about burgers lately has me hungry. I went out and bought a nice big pack of 85-15 ground sirloin. I also bought all the trimmings and here we go. First need a good brew:

Ok now the prep shot. Includes 6 8oz patties, nice sliced red onion, tomato, romaine lettuce, and fatalii pickles, and bacon. Variety of cheeses include American, Gorgonzola, and Chipotle Cheddar.

I did three types of burgers, each of a buttered and toasted kaiser roll. The first one is a black-n-bleu burger with blackening seasoning, gorgonzola cheese bacon, mayo, lettuce, red onion, tomato, and fatalli pickles and peppers. This is the one in the pictures. Next, was a steak burger with the chipotle cheese, lettuce, red onion, fatalii pickles, tomato, bacon, and Lea and Perrins thick steak sauce. The missus prefers a plainer burger with just American cheese, mayo, ketchup, and lettuce and tomato.

Hosky's are chillin'. I'm feelin' poppers and pickles tonight! I've been on the high veg hippy no meat diet all week. I'll trade the meat fix for some deep fried anything this eve! Watch me get down brown later ya'll!
