next time ... cook 2 hours and not 2.5. ... we'll hold the cloves, hold the cinnamon, double down on the lemon, add more spicy peppers - super's, and serve w/ some raw slices of scallion and some fresh cilantro (wasn't avail today) ...

PS - the cleanup of the tagine is quick and simple and it all cooks in the pot ... just how i like it ...

3:53am and finally done w/ work ... did enough that I can take the rest of the holiday off and stay up late monday night and go in late tuesday ... look for DC/SOTM debauchery ...

I'm going to take a stab at Mexican, at over ribs, and at a Po Boy in the upcoming posts ... not necessarily during this weekend though, I'm beat.

Well, as they say, you can't drink all day if you don't start in the morning!

Picked up some real beauts at the store. Gonna rock out some oven-q in honor of labor day (a day early).

I like to season mine simply, with just a sprinkling of sea salt.
They go in the oven at 246, where' they'll be barbequed all day.
Later, I'm gonna dress up some man-gravy, maybe with some honey or brown sugar, baste, and then broil the tops so they are perfectly crispy.
