Every now and then I come up with some drunken ideas that really work. Italian Beef Sammy with French Onion Jus

First things first, Pure Evil Bloody Mary

Chopped up a bunch of onions, jalapenos, and mushroomsin olive oil sea salt and pepper, cooked them down, added garlic, thyme, and red wine, cooked down again, added a quart of beef stock and simmered for a bit.

Added the roast beef and shut it off.

Piled it on an Italian roll, topped with a couple of slices of Cooper Sharp cheese and into the oven to toast for few.

Ladled out a little jus and its mouthfistin' time.

People are all sorts of restless this weekend. Did I see something about Scovie workin' up his kitchen mojo? You have 2.5 hrs before NASCAR starts.
 
JT ... did you make the roast beef, because a) that looks positive AWESOME, and b) i bought a slicer i haven't yet used and i would give that a crack as the debut if i was in the know on how to make roast beef at mi casa ...

Sum - how was curried lamb? I am digging deep into my memory banks and I can't recall having curried lamb, ever ...

What goes with poppers? Well, wings of course. Marinated them in Ring Sting sauce that I reviewed a while back, then cajun seasoning, and onto the grill with da poppers.

I cannot tell a lie, no I bought the roast beef. I do make my own sometimes, but I found it on sale ridiculously cheap so I bought that.
 
Curried lamb is pretty good. I ate about 3/4 of it, so it must have been awesome. I wish my Publix had more than just ground lamb. I'd eat it more often. No worries though... I'm sure I can source something through my local Greek shop or our local butcher if I REALLY want it.
 
I'm my own barista these days ...

lately I've been doing a lot of siphon/vacuum pot coffee ... it looks like a PITA, but it's actually really straightforward and it makes a killer cup ...

in other news, we're still exploring all that Trader Joe's offers ...

a pair of racks of baby's for under $20 is either awesome, or terrible ... but over a pound of chocolate for $5 or $6 or whatever it is at TJ's is a killer deal considering how good the chocolate is ...

The last time I bought a pair of racks of baby's from my butcher, they were $46 ...

I'll vacuum seal them tonight and drop them in the sous vide til Tuesday night ...

... and keep working and imbibing and ordering take-out gyro pizza until I'm free again ...

Pork tocino flip style chops marinated for 5 days in beet juice, water, salt, sugar, rice wine vinegar, and soy.

Just look at that incredible color! The beet juice is a superior coloring agent to the artificial petroleum based cancer causing coloring products normally used.

Even though I had decided to sin against my current healthy diet ways and eat this here porkage, I couldn't totally abandon my veggie ways. I had to toss in some healthy sheeit too, like the Texas Trinity....garlic, onion, and jalapeno.
