I wouldn't be surprised at all if somewhere in Texas there's a joint called Tit's Cafeteria.
 
Couple year's ago down in Waco there was a burger joint called Fat Ho' Burger.

Chicken pita tacos?  Not sure what to call them but they are good.  Homemade tortillas, grilled chicken breasts, grilled onion and bell pepper, greek pico (greek dressing, red onion, tomato and cucumber), ranch dressing and feta cheese.  Not sure why but the one in the picture has a slice of grilled sausage on it  :drunk:

Thanks.  I played around for a long time coming up with the recipe for these.  I wanted a tortilla that was thick but still soft, a little bit chewy but not tough and not brittle.  We eat at alot of Mexican/Tex Mex joints and these are better than all but one (a tiny little taqueria that make the BEST tortillas ever).  The recipe goes:
 
4 cups flour
1 2/3 cup water
5 Tbsp lard (yep, lard)
2 tsp baking powder
1 tsp salt
I also add 1/2 tsp of habanero powder for a little spiciness
 
Mix all ingredients, water being last, in a stand mixer.  Mix on low until fully mixed, maybe 5min or so.  Let it rest 5 minutes.  Mix again for a couple minutes.  Cover with plastic wrap and let it rest for 30 minutes.  The dough will be pretty sticky so use a good amount of flour on the working surface.  This should  make 10-12 golf ball size dough balls, which will roll out to fairly large tortillas.  If you are a fan of smaller ones, it will make several more.  Toss them in a hot cast iron skillet for 30sec to a min per side, the top will bubble when the first flip is ready to be done.

I'd eat that greek chicken stuff until someone pushed me away from the table.
