The General Taco thread. All things taco.

So, I've been wandering around the site trying to find a general taco thread. I'm sure it exists but the only thing I ran across was taco tuesdays and tex mex. I have tacos whenever I can. To hell with Tuesdays! So this is a thread to post your badass tacos. Recipe or not. Just put up a pic. All tacos welcome.

slow cooked, dry rubbed, and smoked pork shoulder shredded and built with some of Salsa Lady's Chipotle BBQ!

I am not even hungry at all, but seeing that I want tacos so bad. Cheesy gordita crunch style is the way I like to go. Only addition would be some baja sauce on there.

Damn, got me thinkin tacos for dinner now!
 
I BBQ something every MLK day.
I get the day off, my daughter's birthday party is always freshly over, so it's a perfect day to relax and reflect.
Today I did an eye of round. Beef. Rubbed with white rub, brisket rub, and Rocketmans smoked hapapeno.

In my opinion, it's kinda lean to do straight on the smoke, but if you do it right, you end up with nice tender meat that doesn't make you feel all fat, depressed, and gassy after eating it.

So today I rubbed it and smoked it 4 hours, and then threw it in the slow cooker (no liquid) on low for 5 more hours. It was fall apart awesome!

Cooked up some corn tortillas, melted white cheddar, added the smoked beef.
Off the heat, I added some turnip greens (my favorite), homemade creamed horseradish, pepper vinegar, and brined chilitepins (Thanks TB).
It's like a soul food - mexican fusion. Boom!

The Soul Food taco... awesome. Wish I was there.

And those foil wrappers are perfect. If your timing is right, those foil wrappers will make your taco hold its shape while it's cooling.

Fat and gassy? I don't know what you speak of.

I want my meat in your rub.
*I want my rubbed meat in your taco.

This isn't getting better so I'll stop. That meal looks fantastic.
