Combo Plate, TB. 2 items representing a region of Mexico. And you have to JayTee (research) it and post your research.


At least that what it was last I heard. Might of changed in the last 5 pages~
 
SL that is kinda correct.

It is Regional Mexican. Combo plate with one popular item, one unique item. The idea is to take the popular (taco, enchilada, burrito, etc.), research where it is from in Mexico, and put it on a plate with an item we may not know about from that same region. The idea is to give us a slammin' combo plate with a version of something we all know, paired with something we have never seen before. We will leave the definition of popular up to you (but you have to already know of it for your staring point right?), and the unique has to be less popular. You have to post the history of both dishes, tying them to this particular region. As we know, there are many stories when it comes to food history, but as long as something is documented, it is enterable. Just tell us the story you researched.

This allows people to post up some slammin' tacos and popular fare, but since we have all seen that before, we also get to see something different.

And all because I love the combo plate! I'd love it if they were more unique than what we get at restaurants so let's see some creative entries!
 
By "Combo Plate", can we all agree not to just add a bunch of refried beans and seasoned rice, sour cream and lettuce with a few chopped tomatoes?
That stuff's just filler.

And I'm with Sum on the celebratory drink.
Don't know if it should be mandatory, but I'm sure as shit gonna do one!
 
Me Too on the drink! And I think The Boss was intending that the 2nd item be not beans-n-rice. Another entrée type item. You know, like taco-n-tostada, etc, etc, etc,... BTW, @Scovie, I didn't respond in the ceviche thread...but I know ceviche is from Peru, but I would of figured out a way to work it into regional. Still Might, since it is served in La Paz, MX....with locally caught shrimp.... (sheesh, now I'm totally craving that again! ) :lol:
 
TB had some ceviche waiting when I got to his place in teh big dry ditch. It was awesome. I think ceviche is indigenous to a few places in Mejeco too. I dunno. This will be a fun weekend.
 
Just a little FYI, based on a research class I had last semester..... Although concentrated in what is known as Mesoamerica, the Maya and Aztec (during the peaks of their civilizations) engaged in long-distance trade, and had outposts in South America into Peru and beyond, and North America into New Mexico and the Southwest region. You're probably plenty smart enough to figure out what that means from a cuisine perspective.. . .

ya beans and rice would be stupid no way my vote will be for a taco,a scoop of beans and a lattle of rice.
 
Yes a celebratory MEXICAN drink, even if it is Corona! Required for Cinco de Mayo, no excuses. This is a party. You want to make a margarita with fresh juices to help your votes? Go for it.

Usually 2 pics is the limit so it's not cluttered, but for this we will allow three. Here's how you should do it:

Pic 3 - Closeup of other combo item.

If you choose to serve with with rice and beans or a side that is up to you, but just make sure everything is on one plate, that's how combo plates are served.

Now you know everything for tomorrow, so get ready!

I just got off the phone with a guy I thought was Manuel. He was going to give me the secrets to a thousand year old recipe and we got disconnected. I called back and it turns out it was not Manuel, but his brother Paco. Paco is a shady character and I am not sure I can trust him anyway. I will continue to try to reach Manuel.
