Hey, Bit of help. almost off topic but could put me in contention.
How do you cook the chicken in a taco and not make it dry out? I either get it raw, watery or dry. and never get the flavours that Taco/kebab joints can get.
 
Any pointers?
 
Kebab way: Marinate cubes in yogurt and spices put on a skewer and grill it over medium flame with some char...
 
Best Mexican ways are shredded and simmered in sauce, and "fajita" chicken cooked with achiote, spices, peppers, onions...

I am no fan of mayo, except in very small quantities. However, some peeps swear by marinating chicken in mayo. Probably similar to yogurt in that you are adding fat of one sort or another.
 
Still.... this leads to the definition of "ground" and "minced" for the TD. I dunno.... I'm not a fan of ground beef, for tacos, though it will do in a pinch for a work weeknight meal. And who ever heard of ground fish tacos? :crazy:  How about ground soy tacos? (Yeah, ain't that just tofu?) So I am wondering what the hey about the ground/minced requirement. Was that actually an SNF contribution? :think:  Meh, doesn't matter, it just has me a bit puzzled.
 
Picadillo is ground beef and that is his signature dish, as stated, and the theme is to beat him at it (with any protein and only 1 has to be minced to keep it interesting). Yes, of course, that is his call, it is his signature. Sorry the first post was not clear.

Don't forget the possibility of ground vegetables. Mashed potato tacos anyone?
