Hey guys! I'm back! Did y'all miss seeing pictures of veggies?
I am not really home in the evening much anymore so I tend to cook a big meal to last a few days.  Last night I went with a cauliflower and chickpea curry.  I used this recipe as a jumping point http://www.recipetineats.com/cauliflower-and-chickpea-curry/  I pretty much just used the recipe but added more slightly more cauliflower and peas, and added cabbage and smoked red hab powder. I had it was (light?) brown rice and naan bread.  Pretty good and simple, only took about 30-40 min to make and part of the time is it simmering down so I was able to get the dishes done in the mean time. I'm keeping it and will probably do it again in the future.

Yah Mon! I'm back from Jamaica and missing the food.  I won't lie, in Jamaica I tried all the local foods I could including jerk chicken, pork, fish.  But now that I'm back here its back to the regularly scheduled program.  I threw together some Jamaican inspired food last night.  Jerk Bbq jackfruit sandwiches, peas and rice, and fried plantains.

That was the original plan actually, but I they were smaller than the buns and I wouldn't have had enough to feed everyone.  (I didn't do the plantains myself, I got a box of the frozen ones you just throw in the fryer)
